My sister finally talked me into trying it year before last and I love them that way, now. I just wash and dry them and freeze them whole. When you need to use them, take as many as you need from the freezer and let thaw for just a few minutes. Cut out the core and the skins will slip right off. I chop them while they are still partially frozen and put them on top of the hot foods that I am adding them to, and they stay in chunks. I still can most of my tomatoes, but I use these for dishes where I want a fresher flavor.
