  • Soup?

    I loved to make soup, so I am trying to figure out something that may work.

    Chicken broth to start, then diced chicken....maybe spinach for florentine....celery....mushrooms...

    thoughts? Or other soup recipes?

    I do pumpkin soup with canned pumpkin, chicken broth, cream and some spices. It is easy, creamy, and filling.

      I love soup! If you make your own chicken broth, so much the better. You can freeze it in individual serving sizes and store the blocks in the freezer in a freezer bag.

      Asian-Style Hot and Sour Soup
      4 cups Chicken Broth
      2 cups cooked chicken meat
      1/2 cup bok choy or spinach sliced
      1/4 cup onion, thinly sliced
      2 tablespoons white vinegar
      1 teaspoon hot chili oil
      1/2 teaspoon toasted sesame oil
      optional: bean sprouts, tofu, thin mushroom slices

      Saute the onion in alittle oil, until softened. Add the chicken broth and bring to a boil. REduce to a simmer. Add the cooked chicken and add the bok choy or spinach (and other veggies if you are using them). Simmer until the veggies are wilted and the chicken is heated throught. Remove from heat. Add the vinegar, chili oil and sesame oil.

      "Tortilla" soup: do the same as for the Asian style soup, but replace the bok choy with a chopped tomato, replace the vinegar with a squirt of fresh lime juice and nix the sesame oil. Use chopped or sliced avocado as a garnish.

      "Egg noodles": beat an egg. Add salt, pepper and a tablespoon of Parmesan cheese if you like it. Butter a microwave safe plate. Pour the egg mixture onto it---it should be thin! Microwave until the egg is set. Cool slightly and remove it from the plate. Roll the egg patty up, then slice across. Thin slices will yield thin "noodles". Add to your soup.
