This is my favorite part of the potatoe, but I am on induction....does anyone know for sure if we can eat the baked skin with butter, salt & pepper and sour cream???

but...
, just the skin of one potato isn't too bad (granted it is mostly carbs compared to fat and protein). Below is the fitday information for just the skin (I'm assuming that it's done from peelings only). I'm also making the assumption that this an "average" skin. From the numbers, this skin weighs about 38grams
