I was just wondering if anyone had some good ideas for different breakfast foods. I usually get hungry fast when I wake up (and sick easily if I don't eat) and since I started Atkins (I'm going to do induction for a bit) I have pretty much had scrambled eggs with cheese almost every day. I'd really love it if someone could share some delicious and quick morning meals. Thanks a bunch!

Re: Breakfast is eggs....and.....?
First, congrats on the 14 lb. loss .... awesome! As for breakfast, there's no reason you can't have dinner in the morning
For instance, this morning I had cold roast beef with some mayonnaise, and some sliced tomato. How 'bout a ham "sammy" with the ham stuck between two slices of swiss cheese (can you handle mustard in the morning?).

I cook up a couple of different quiches and then freeze them in individual servings and bring out the one I want..either the night before or in the morning and nuke it. Check out the link in my sig line for other ideas.Elsie150

Re: Breakfast is eggs....and.....?
I know this is more eggs, but I love making egg muffins for when I'm on the go. Scramble up eggs with cooked breakfast meat and cheese, fill up muffin cups about 2/3 full with the mixture and bake at 350 until they're set, about 10-12 minutes or so. Then I keep them in the fridge in ziploc bags and grab a couple when I'm heading out for work. You can microwave them for about 30 seconds and you have instant mini omelettes!

That is a great idea with the quiche and the recipes that you posted in that blog will be a big help. In fact I'm going to try the mock danish this morning! I appreciate the feedback. Good luck with your continued weight loss!5'7"

Egg muffins, who would have thought... it's a great idea though. How long do they keep in the fridge? I am going to have to try that out, thanks! Wow, you only have 23 more pounds to go, how exciting! Your mini rewards are a good idea too.5'7"

Re: Breakfast is eggs....and.....?
You could make some oopsie rolls and have a "egg" oopsie with bacon or ham and cheese. I love having egg creams for breakfast. You could also make a "blt" with a toasted oopsie.

Re: Breakfast is eggs....and.....?
I didn't make this up, but I can't find the original recipe. I have triple whey protein powder.
2 1/2 tbsp flax seeds, ground
1/2 scoop whey powder (shake powder with splenda works)
1/2 tsp cinnamon ( I actually use more.. stuff is good for the circulatory system!)
1 1/2 pats soft or melted butter
2-3 oz cream
mix the protein powder, flax, cinnamon
mix in the soft butter so that it is crumbs
spread on a plate sprayed with non stick spray, nuke for 1 min 15 secs, give or take. Sometimes on 1 1/2 minutes it browned more than I wanted. Scrape back into a bowl and set in the freezer to chill for a few minutes.
Top with cream.
I always used to eat flax cereal, but the old 'nuke it' version was slimy. This is 'almost' like eating cold cereal. When I eat this I am totally full and need nothing else.. which sounds about right considering I just consumed a considerable amount of fats!
