  • Does anyone make their own?

    Butter, cheese or any other goodies? If so share your recipe. I just made my first small batch of butter, and it was so good, the only problem was it left me really wanting to slather it on some fresh baked warm bread, but I resisted and put it in the fridge to harden up.

    I think I'm going to try cheese next. Anybody have any other ideas?
    1st Goal ~ 199 Onderland -Met 3/29/10
    2nd Goal ~ 174 No longer obese
    3rd Goal ~ 150 In the home stretch
    Final Goal ~ 145 or below (I'll know when I get there) No longer overweight

    Current Mini Goals:
    1) 35 pounds lost
    2) 40 pounds lost to move to Rung 5
    3) 45 pounds lost to update 15 pound loss picture series

    I've made my own ricotta and yogurt. If you do a search of this forum, you'll find a thread on cheese making and yogurt making.

    Ricotta is pretty easy to do.....heat milk and add lemon juice, then strain.

    I haven't tried making butter.

      Barb, How do you make butter? Do you just whip cream until it turns to butter? I've seen recipes for cheese and it seems really complicated.
      My doctor told me to stop having intimate dinners for four. Unless there are three other people.

        Mother Earth News: The Original Guide to Living Wisely has a recipe section. A couple of issues ago, it had an article on cheese making. Try http://www.grit.com too.

          Susan the butter is really easy to make. I just took a canning jar, and filled it about a third of the way with heavy whipping cream. And then start shaking the jar. In a few minutes, you won't hear the liquid swishing anymore as it has turned to whipped cream, but keep shaking, and in a few more minutes (10-30, its much easier if you have kids that want to help, lol) you start seeing and hearing a big lump sloshing around in there, by now the cream is watery clear like skim milk or clearer and there is a big yellow hunk of butter in the middle. When the cream is basically clear and you have your lump of butter, drain the clear liquid off of the butter, then put some cold water in your jar and rinse the butter and pour it off, repeat until the water is clear. After the final rinse, lay your butter lump on a cutting board or something similar and press it with a spatula to make sure you get out any buttermilk that may be on the inside (they say buttermilk left behind will spoil the butter). You can then either just wrap it in wax paper and put in the fridge or if you wish salt to taste stirring with a spatula before wrapping in wax paper.

            And Megs... I never knew ricotta was so easy to make.

              Thanks, Barb. Sounds fun and easy. I'm wondering if I could do that with a magic bullet or a food processor. But when I make whipped cream it seems to kind of go to the side of the container so not sure. Just looking for an easier way LOL

                I'm going to try making a bigger batch next time using my electric ice cream maker (need to find some use for it, lol). I'll let you know how that works.

                  Gee, I never thought about that I guess it should work. Was wondering though if the paddle would whip it fast enough. Wouldn't hurt to try

                    Sally, it's very easy! The recipe I used was similar to this one:

                    Cheese making recipe: ricotta

                    It's mild tasting with a nice flavor and richness the stuff in the store doesn't have.

                      Thanks Megs! I wanna try this when I can track down muslin here.
                      In the supermarkets we get cow's milk ricotta or sheep milk ricotta and the latter is by far the tastier kind (richer and creamier)... yummy with a bit of cocoa and sweetner.
                      I'd really like to have a go at this homemade variety sometime and see how it compares.

                        No problem! I'm going to an autumn festival in a few weeks. They're having a local, organic goat cheese maker this year. I looked at the cheesemaker's website and I hope they bring their goat ricotta with them. I've read that goat ricotta is very creamy and delicious. So I have my fingers crossed.

                          I made butter in a blender, once ... about a hundred years ago I just poured in the cream, hit "turbo" (or whatever the highest speed was) and watched until the flecks of butter appeared in the buttermilk; drained it, rinsed it, pressed it and ... it tasted just like store butter! I never did it again; but it was a fun experiment

                            This takes me back to my junior school days!

                            In England at that time all children used to get a free 1/3rd of a pint of milk each day, and we often poured the cream off the top into a big screwtop jar and took turns to shake it and turn it to butter.
