You know these suckers are pretty darn good for you...there are two camps...sardine lovers and sardine haters! I happen to love them...it is strange to think this is one of my favorite things I used to share with my dad!!!..he would take a container of sour cream dice some onions into it salt and fresh cracked pepper then dump a can of tiny sardines in olive oil drained...into it and we would eat it on bread with fresh tomatoes....my dad rarely cooked so this became an elaborate drama when he made it for us!...a very coveted recipe to pass I pass to you..and ...well i....t is really good ...so try instead of the bread try it on sliced jicama or celery or a bell pepper slice ...or just dump it on a salad!.....
my second favorite recipe for canned sardines is
Cambodian Sardine spread
a can of sardines in olive oil
1 package splenda (or leave it out)
one tablespoon fish sauce
1/2 tablespoon lime juice
1/2 tbl natural peanut butter
1 minced jalepeno (or other hot chile)
just toss it in the food processor or mash well with a fork and spread on baby eggplants sliced or jicama or any veggie you like! I have served this at parties and it disapeared!
