  • Pork loin (pressure cooker)

    Ok. Number 1 in the picture. That´s for us the pork loin:



    I buy half loin and I cook it entire. Once it´s cooked and cold I cut it into slices.

    First of all put some olive oil in the pressure cooker and fry lightly the loin. All sides. Then it´s sealed and has nice color.
    Take it out and reserve it.

    In the same oil fry lightly 2 Spanish onion (the big and white one), 2 peeled garlic cloves and 2 soft and red tomatos (also peeled). Move.
    Add the loin, 1 Laurel leaf, 1 clove and cognac (about 3 fl. oz).
    Close the cooker and cooked as I already posted (see beef ribs post)
    It´s ready in 10 minutes.

    When it´s cooked take the loin out, the clove and the laurel (throw the spices away)
    Grind the sauce up. Cut the loin into slices and .... ENJOY! :icondance

    Sounds delicious! What's a laurel?

    I was wondering , what do you use to grind up your sauces?

        Hmm, that I think is some kind of mixer. I have a blender, but its a pain to use.

        So laurel is bay leaf! Cool, another name for it!

                  I love pork loin in the pressure cooker. I add vinegar and hot pepper to that and have bbq yum!

                    I know Pau would have rolled her eyes but I do something a little different with this recipe I must confesss


                    1/4 cup Chimayo red chile
                    and a red pepper diced up to the pressure cooker ...


                    also when I take it off I take all the juice puree it then add 1 cup of green olives and pour the sauce over the pork loin...


                    this is a fantastic dish I swear!!! try it!!!
