and ate them with a tablespoon of SF maple syrup...OMG sooooo yummy! It tasted exactly like the hotcakes you get from McD's, and only 3 mins in the microwave! I don't know if the recipe has been posted already but I'll share it anyway because its super easy and fast. 
1 egg
1 T melted butter
1 T water
2 1/2 T ground almond meal
1/4 t baking powder
Combine the egg, butter and water in a microwave safe dish. Whisk. Add the almond meal and baking powder. Whisk until smooth. Place the dish in the microwave and cook on high for 3 mins. Works out to roughly 3 carbs (minus the topping)
Serve with SF maple syrup or the topping of your choice.
