Just made a microwave pancake out of almond meal

  • Just made a microwave pancake out of almond meal

    and ate them with a tablespoon of SF maple syrup...OMG sooooo yummy! It tasted exactly like the hotcakes you get from McD's, and only 3 mins in the microwave! I don't know if the recipe has been posted already but I'll share it anyway because its super easy and fast.

    1 egg
    1 T melted butter
    1 T water
    2 1/2 T ground almond meal
    1/4 t baking powder

    Combine the egg, butter and water in a microwave safe dish. Whisk. Add the almond meal and baking powder. Whisk until smooth. Place the dish in the microwave and cook on high for 3 mins. Works out to roughly 3 carbs (minus the topping)

    Serve with SF maple syrup or the topping of your choice.

    Yumm! Nice... and quick too!
    Just one small point (not meaning to rain on your parade)... I see you are doing extended induction. Almond meal is not induction friendly. You need to get to the nut rung of OWL. That's not far off though!

          There's a great alternative to "cheats for the month"... that's moving to OWL!
          Don't be afraid of OWL... you still get to lose weight (sometimes even faster on the early rungs) and the extra food choices are terrific. You'd be able to have almond flour regularly.
          I was so happy to add that to my foods... it's so wonderfully versatile and good for you!
