I've researched the heck out of this and I still can't get the answers I'm looking for. Maybe one of you veterans can help us all out on this...
I find it IMPOSSIBLE to find BOTH sugar-free and nitrite-free bacon. I live in the largest city in the mid-Atlantic and I still can't find it at Whole Foods. I can only find nitrite-free or sugar-free, but not both. It's so frustrating. I spent a half an hour looking through every single type of bacon that WF had, and I came up with nothing.
Would someone PLEASE give me the names of as many brands as you can think of for sugar-free AND nitrite-free bacon? (Please don't give me a brand that only offers one or the other-- I know almost all of them.) This question also stands for sausage.
On a better note, I did manage to find sugar-free, nitrite-free chorizo in the fresh meats section of WF.
They make many of their own sausages. You will need to carefully read each package, but it's worth it. I fried a gigantic chorizo with one egg for breakfast today. It was so nice and spicy! 
However, regarding WF homemade sausage, I'm confused as to how some of their varieties can have carbs when no sugar is listed. (I checked for things like honey, fillers, etc. and there were none.) Would someone give your thoughts on this?
