  • I made a yummy pumpkin treat...

    After a week of being tempted to cheat...but not actually cheating...I decided it was time to make something sweet for myself that was Induction legal.

    I mixed the following items in a blender until smooth and thick:

    3 ounces heavy cream
    2 ounces cream cheese
    2 Tablespoons cooked mashed pumpkin
    1 packet Truvia
    .5 teaspoons cinnamon
    .5 teaspoons nutmeg

    According to fitday the mix has 5.8 net carbs and 1/2 of the recipe was just the right amount. It tastes like pumpkin cheesecake minus the crust. It is very high in fat so it helped me get past my urge to eat something non-legal.

      Just be careful because the entire recipe uses the 3 fluid ounce maximum "Special Foods Category" limit for heavy cream. I'm only saying that for the folks for whom large amounts of heavy cream causes weight loss problems.

          Sounds great - i almost bought pumpkin last week but wasn't sure what to do w/ it. Looking forward to trying this!

            I rarely have any cream...just not that interested in it. So using it this way is probably the only way I will use it and I only ate half of the recipe...so I only ate 1.5 ounces . I put the rest in the freezer and may eat it later this week. Maybe it will taste like pumpkin ice cream????
