      So last night I got home from work and the other half had baked chicken thighs. She cooks very simple, no seasonings... no flavor so I usually take my serving and pep it up a bit. It was already starting to cool down ( I work until 6PM which is when the kids usually eat) so I threw it under the broiler to crisp the skin up a bit. While that was in I sauteed ( in butter) 1 small onion cut into thin slices with a few cloves of garlic and a few sliced mushrooms.

      Once soft I added a a tablespoon of green curry paste, a dash of cumin dash of oregano ( I love oregano) dash of cayanne, dash of paparika and a few red pepper flakes. Gave this a good mix and then added about 1/4 cup of water. I got the pan hot enough to bring the water to a boil and reduce to a nice thick sauce. I plated my chicken and poured the "gravy" over my chicken with broccoli on the side.

      Great flavor and very fast.

        Wow that sounds good. You can come cook at my house anytime. And I'll eat every bite, I love curry.

          This time of year is really hard to eat well. Between being swamped at work and all the running around that has to be done at home. I've done my best though. I still take off the bun if we have to go to Wendy's and try hard to look away from all things bad.

          That said, a few nights ago I was hungry at home. My other half had bought some TGIF fajita mix but didn't care for it and there was an extra bag in the freezer. I tossed the tortillas and sauce leaving me with frozen peppers, onions and chicken.

          In a pan with oil that went and once it thawed and started to cook I added a bit of garlic, few dashes of cumin, few dashes of cayenne, a tablespoon of green curry paste and just to try a tablespoon of smooth natural peanut butter. I then added about 1/4 cup of water and let it reduce to a nice thick gravy.

          MAN, it was great. The curry and peanut butter played VERY nicely together. It was just warm enough to let me know that the cayenne was there and just smokey enough to let me know that the cumin was there.. a perfect mix that I'll make again... just maybe not with the frozen fajita mix

            I was missing Asian food but knew that restaurants are going to put ingredients in that I don't want so this afternoon was experiment time.

            Made Vietnamese salmon and served it on a bed of stir fried bean sprouts, julienned bok choy, celery and snow peas instead of rice noodles. Topped with some chopped roasted peanuts and fresh herbs (scallion, dill, basil).

            The salmon used both a dry rub (turmeric, coriander, yellow curry, ginger, etc.) and a chile-lime sauce over both the fish and veg. It came out very good. I did take notes as I was cooking but need to make an actual recipe and run it thru FitDay and I will post the recipe and nutritional stats. I'll double check but I think the recipe is suitable for Induction if you leave out the peanuts.

              I posted a low carb sushi roll recipe on my blog last week and it doesn't use cauliflower or a binder to hold the "rice" together.

                I've been making low carb bento each week again, so I've had amazing luck making onigiri without rice and using the nori again. I love cute food!
