  • That Zucchinni Stuff

    Imagine my (pleasant) surprise when my young son came home from school and was sooooo hungry.....he wanted me to make "that zucchini stuff for him", actually he is my healthiest eater, but it's still amazing that he's requesting this stuff. Here's what i do w/ zucchini:

    Sautee onions (diced or thinly sliced) till translucent w/ sweet paprika and , add zucchini (thin slices) and or thin slices of kohlrabi (if using both add the kohlrahbi first) and sautee till zucchini is bright green then add, julliened peppers (red/yellow/green) , sautee for i minute and add 1 small tomato (optional), sf tomato sauce ( maybe 2 tbs if you use 2 zucchinnis), season to taste w/ bl pepper, salt, oregano, parsley, basil, add garlic or garlic powder....it's fine by it self, great w/ grated parmesan cheese

    Variationsw/ this mix are as follows:
    -Use less tomato sauce, add a few eggs and bake (not too long coz the veggies are already cooked)
    -Line 1\2 the veggies in a pan, add yellow cheese (mozzarella, muenster, anything that melts) add the rest of the veggies, top w/ yellow cheese...u can leave out the tomato iin the sautee step and top w/ thin slices of tomato + grated parmesan -- bake or microwave
    -Add eggs, heavy cream, cream cheese. yellow cheese and and mix it up and bake - becomes a filling veggie quiche
    -grate the ingredients and sautee, add eggs and bake.. if you bake a thin layer u can use as veggie pizza crust, add cheese to this (optional)

    Basically i like 2 make this stuff and recycle the leftovers into one or more of the above.

    Sorry that i left out exact measurements, but that's the versatality of this concoction u can add more or less of each thing according 2 your personal taste and whatever u have in your kitchen, roughly i use 1-2 onions/ 2-3 zucchini/half to 2/3 cup peppers/ not more than one tomato (carby when cooked)/ 1-2 kohlrabi depending on amt of zucchini...variations:2 -3 eggs, 2-3 slices of cheese, for the quiche i use about 2-3 tbs cream + 2 tbs cr cheese. Usually i sautee this in EVOO or cold pressed canola oil or a combination of the two.

    Yes! Zucchini makes an excellent "filler" for veggie medleys. I typically add cubed zucchini to carrots, potatoes or peas to extend those starchy veggies. Let's face it, 5 net carbs of potatoes, looks like 5 net carbs of potatoes, not a side dish serving. But add 5 net carbs of zucchini to that and you have a good serving size of veg, with enough of the starchy veg flavor.



    I also have a julienne peeler--it looks like a regular vegetable peeler but has little teeth on one blade to make a fine julienne slice. I use that peeler to make "noodles" of zucchini or cucumber. These noodles are great during the summer when you want a "cold" noodle dish, like a Thai-style spicy peanut noodle dish. After I make the noodles, I sprinkle salt on them and let them stand for a few minutes. This releases the excess water from the noodles and gives them a firmer texture. Then I rinse them in water to remove the salt and add them to the spicy peanut sauce or I toss the "noodles" with olive oil, garlic, herbs, and a touch of lemon for a different kind of veggie salad.

      Zucchini is such a versatile veggie...just love it! Your concoction with the kohlrabi sounds interesting. I don't think I've seen kohlrabi in my local stores, but I'm going to ask about it...I've never tried it before.

      I add zukes to a lot of my recipes. It helps to up my veggie consumption and it has a pretty neutral flavor. Made chili a few days ago and tried adding shredded zucchini to it. It was wonderful and made the chili have a thicker, chunkier texture. My low carb chilis were coming out more like soups (using beef broth to cut down on the tomato carbs and not many beans) but the zucchini fixed that.

      Thanks for the other zucchini ideas.

      p.s. How great that your son is looking for veggies for a snack!

        I LOVE courgettes/zucchini! I used to bake fried zucchini slices with onions and cheese all the time, till I had to give up cheese due to intolerance. I never thought of making it with eggs instead! Can't wait to try it!

        I also love zucchini noodles raw with mayonnaise, boiled egg and olives

          I forgot one of the best zucchini recipes: Zucchini chips.

          If you have a food dehydrator, slice the zukes thinly. And dehydrate them until they are completely dry and crisp. You can eat them as is. I found that you can pan fry these dehydrated chips in oil for a few seconds---they brown quickly! Pan-fried they resemble potato chips more closely.

          It's a bonus recipe, especially if you have a garden and you went a little crazy planting zucchini, because the dehydrated zucchini can be stored and used in stews etc.

            Wow, what zucchinni creativity, i love the tip about salting the zucchinni 'noodles', it's been a while since i made them. I usually sautee them w/minced garlic +bl pepper and add parmesan cheese, but salting and using them raw sounds great...oh i can't wait to have PB again! adding mayo sounds good too!
            I don't remember buying Kohlrahbi in the States, i think the true season is more spring/summer (they were cheap here then) the texture is firmer than zucchinni and less watery - has a cabbagy kind of odor when cooking, but it doesn't taste too cabbagy - esp w/ seasoning and other veggies, they're really versatile.
            A food dehydrator sounds great esp when i think about the winter veggies >>> will think about it for next year to hold on to the summer /fall flavorful veggies!

              Wow I just discovered Zoodles ==> Zucchini Noodles before I read this thread and it was like the best discovery but the variations here are way cool. thanks
