Imagine my (pleasant) surprise when my young son came home from school and was sooooo hungry.....he wanted me to make "that zucchini stuff for him", actually he is my healthiest eater, but it's still amazing that he's requesting this stuff. Here's what i do w/ zucchini:
Sautee onions (diced or thinly sliced) till translucent w/ sweet paprika and , add zucchini (thin slices) and or thin slices of kohlrabi (if using both add the kohlrahbi first) and sautee till zucchini is bright green then add, julliened peppers (red/yellow/green) , sautee for i minute and add 1 small tomato (optional), sf tomato sauce ( maybe 2 tbs if you use 2 zucchinnis), season to taste w/ bl pepper, salt, oregano, parsley, basil, add garlic or garlic powder....it's fine by it self, great w/ grated parmesan cheese
Variationsw/ this mix are as follows:
-Use less tomato sauce, add a few eggs and bake (not too long coz the veggies are already cooked)
-Line 1\2 the veggies in a pan, add yellow cheese (mozzarella, muenster, anything that melts) add the rest of the veggies, top w/ yellow cheese...u can leave out the tomato iin the sautee step and top w/ thin slices of tomato + grated parmesan -- bake or microwave
-Add eggs, heavy cream, cream cheese. yellow cheese and and mix it up and bake - becomes a filling veggie quiche
-grate the ingredients and sautee, add eggs and bake.. if you bake a thin layer u can use as veggie pizza crust, add cheese to this (optional)
Basically i like 2 make this stuff and recycle the leftovers into one or more of the above.
Sorry that i left out exact measurements, but that's the versatality of this concoction u can add more or less of each thing according 2 your personal taste and whatever u have in your kitchen, roughly i use 1-2 onions/ 2-3 zucchini/half to 2/3 cup peppers/ not more than one tomato (carby when cooked)/ 1-2 kohlrabi depending on amt of zucchini...variations:2 -3 eggs, 2-3 slices of cheese, for the quiche i use about 2-3 tbs cream + 2 tbs cr cheese. Usually i sautee this in EVOO or cold pressed canola oil or a combination of the two.

Zucchini makes an excellent "filler" for veggie medleys. I typically add cubed zucchini to carrots, potatoes or peas to extend those starchy veggies. Let's face it, 5 net carbs of potatoes, looks like 5 net carbs of potatoes, not a side dish serving. But add 5 net carbs of zucchini to that and you have a good serving size of veg, with enough of the starchy veg flavor.
