cauliflower rice??

  • cauliflower rice??

    I am new and maybe this was covered but I just heard about making rice with cauliflower and that it amazingly resembles rice, has anyone tried making it and does it really taste and have the consistensy of rice, I find it so hard to believe, but I definately hope its true

      Instead of finding exact substitutes for the foods you used to love pre-Atkins, I think it's better to find new foods you like.

        I do make a fried cauliflower rice that is really good. I think for me adding the spices of curry and ginger makes all the difference. It is a really good side dish or made with shrimp.
        I have not really used cauliflower just as "rice". I did come across a video of it the other day

        But I am quite sure that as Georgiana says this will taste like cauliflower. But it could still be very delicious.

          It tastes like cauliflower ... since that's what it is.

          What it does is mimic the appearance of rice ...

          It's big advantage is that if you're using a sauce, the "rice" takes on the taste of the sauce.

          Which is really all I want!

            I find that if you use the frozen cauliflower it doesn't have as much caul taste as the fresh but - yea -it tastes like cauliflower.

            What I like about it is you really can use it as a potato replacement.

            I like LIndas recipes the best.

              I can't wait, I'm gonna try the frozen as you suggest. I absolutely love the texture of rice and I like cauliflower too, so I'll probably love it, actually I'm just grateful for finding this out I had no idea there was even any such thing that would resemble rice that I could ever eat on Atkins, like noodle, I love noodles and after discovering shirataki noodles it literally opened a new world for me to satisfy the need for noodles, the fact that they're alittle chewy doesn't make a bit of difference to me I'm just glad I can eat quilt free noodles. I Make tofu meatballs and tada I have my favorite meal, what more could I want, my favorite foods at way less than half the calories and carbs, if I knew this way of eating years ago I would never be overweight.

                Shirataki noodles aren't acceptable on Induction.

                  Hi! I actually made the Fried "Rice" (made from cauliflower) from Linda's site and it tasted darn good.
                  But I do agree with Georgiana because I have tried a few new foods that I didn't eat pre-Atkins that are very very good and I would chose those over something I had pre-Atkins any day now!

                    why no shirataki noodles on induction?

                    this baffles me, why not!!! Its like a miracle food, not even a food, made from the root of a vegatable and theres no calories, no starch, just fiber, I don't get that

                      Because what it's made out of isn't legal on Induction.

                        No one has a "need" for noodles. You only want noodles. There's a big difference!

                        If you can't give up noodles for two weeks, then noodles are a problem food for you and you should try to break the addiction rather than find "ingenious" ways to satisfy it. Pasta are a problem food for many. That's the main reason why I don't consider shirataki noodles appropriate for Induction.

                          my perception of induction is to make it as pleasing as possible and to achieve this I like to eat foods that I enjoy as to not feel like induction as unpleasant. I do not want to force myself to eat foods that I don't like for that would only make the stage undesireable and therefore I might cheat. MY intention is not to give in however but to sustain the induction period as long as I can by creatively blending the foods I like in a new form. Noodles have been a staple of my diet for some time and with shirataki noodles now I feel I can incorporate them in my diet without sacrificing anything, its certainly NOT that I can't eat noodles for two weeks. I respectfully still don't quite understand with the content of these noodles why they would be legal.

                            What's Dr. Atkins' perception of Induction?

                            That's the plan we follow here!

                            Chocolate was a staple of my diet.

                            It's not on the Induction food list.

                            The ingredients are not on the Induction food list that Dr. Atkins gave us in the 2002 edition of Dr. Atkins New Diet Revolution.

                              I can't answer your question as to why the shirataki noodles aren't on Dr. Atkins list of allowed foods during Induction. Maybe during the time he was writing the book shirataki noodles weren't on the market. I'm speculating.

                              I would hate to see you give up & become discouraged at the beginning of your journey. Per Dr. Atkins plan we are allowed to eat the foods on the Induction list. I'm not sure at what point these noodles can be added to what you are eating. I'm sure that there are members who will have that answer.
