cauliflower rice??

    Since they're made from "Konjac flour, which comes from the roots of the yam-like Konjac plant grown in Japan and China", they would come back on the starchy vegetable rung of OWL ... or in Pre-maintenance.

      Jane, I have always heard that folks eat Shirataki noodles are fine for extended induction as the have no carbs I would think Dr A would approve. The problem with them is that they really don't taste like the noodles you are use to and I think you would be disappointed.
      There was a huge debate a few years ago about bitter melon. Bitter melon is a Asian plant that isn't listed on the induction food list, but it has the same properties of other low carb veggies. Some said we couldn't eat it, some said why the heck not, and so we agreed to disagree. I think these noodles are the same, If Dr A knew they existed, he would have included them in the list of induction foods, but he couldn't be expected to know about every ethnic food. I mean what about grubs, he didn't list them but anything that tastes like butter has to be good and he would certainly approve. LOL

      Use your own common sense and your own judgement and if you want to try them, do it. But don't be surprised if your disappointed. I tried thin sliced zucchini for noodles and they were nothing like noodles, I've tried spaghetti squash as a noodle sub and it was next to nasty. But when I cooked it in a recipe that I didn't have before, it was delightful.

      Just understand there are a lot of new folks on board and if you say your on induction and eating noodles, you might get a lot of flack from the purest. because they don't want them confused about the rules.

          The cauliflower rice is a must! You need to prepare it as directed (no added water) and avoid any left over chunks in the food processor from the stalk. What you end up with is almost a dry "minute rice" texture, and it absorbs any sauce or seasoning that you put on it.

          Tonight we had Beef Stirfry over "rice", last night we had Chili over "rice", and I've also had Beef Stroganoff over "rice" as well.

          Sure, I bet if you eat it straight up it won't taste like rice, but otherwise it's a pretty close substitution.

          I also agree that the faux potatoes are super yummy.

            excellent point and very well put. For strictly the point of it not being on induction makes it illegal. I have tried them and really enjoy them, just a little butter and parmesan cheese and I'm in. And combined with extra firm tofu meatballs (no bread crumbs obviously) its a winning combination for me at least. With the enhanced benefit of Glucomannan fiber I think the Doc would have given it two thumbs up, huh oh, maybe I went too far with that, perhaps of course relative to what stage of the diet. I feel that for me to have the staying power and longevity of this way of eating I think it important to enjoy the foods you eat , perhaps for some I have too much emphasis on this. For me I don't eat a big variety of foods so when I find something that I really like AND it literally has almost NO negatives, why not. I've always gravitated to starchy foods and today when I made rice cauliflower for the first time, I was in heaven. Again a little salt and butter and some freshly grated parmesan cheese, for me it doesn't get any better.

              I think he would have said that since it's made from a starchy vegetable, that it should wait until the later rungs of OWL or premaintenance.

              Agreed.

              However, one can do that and follow Atkins as the good doctor wrote the plan!

              If you chose not to do that, that is certainly your decision.

                  I find cauliflower rice best if just microwaved (without water) covered, for just the shortest of times... maybe a minute...depends on your microwave... but when overcooked it tastes more of cauliflower and is too soft.

                          I love cauliflower rice! To the point, I have to be careful because it can be a trigger food that causes me to overeat it

                          I often have some around to use for stir fries, faux hash browns, to act like rice for roasts, or my other new favorite, to use for the crust for pizza. It usually takes on the flavor of whatever you mix it with.

                          The nice thing is you can rice a whole head of cauliflower and it will keep for about a week in the fridge for multiple dishes if you are cooking for one or two or use with leftovers.

                            Here is my version of it, which is more of a main dish approach, but you could eliminate the meat for a side dish. It also has no cauliflower taste or smell from my point of view. For noodle replacement, I make this same recipe with a bit more garlic, cream, and italian seasonings and eliminate the chinese flavors.

                                That is one of the reasons I enjoy the other recipe video so much. It's seeing it created that makes me want to make it. I learn more America's Test Kitchen than I ever do from Cook's Illustrated magazine. I am glad you liked it. I should have another recipe coming up soon (next week).
