    I would make mashed.

If it's too icky, I would throw it out.

If it isn't too icky, trim the bad parts. cut into bite sized pieces. toss with olive oil and salt. Roast in the oven until golden brown. Towards the last 5 minutes of cooking add a sliced onion. When cooked, put into a bowl. Add curry powder, pepper (black or cayenne), and just enough sour cream to coat. This makes a nice curried cauliflower.

I second the roasted cauliflower! Grilled cauliflower is also awesome. (I really don't care much for cauliflower in general but it is one of my bf's favorite foods, so I cook it often. The first time I grilled it by wrapping the whole head in foil with some butter and garlic, I seriously could not believe how good it came out--delicious!)

I'd make a cauliflower au gratin. I think the cheese would cover any "not quite fresh" taste.

                      Re: If you had...

I just made cauli tots out of cauliflower for the second time yesterday and posted the recipes to the blog, and it was terrific! I then, naturally, added cheese and chili to it.

                      It's induction friendly, too!
