We deep fried some chicken tenders in peanut oil, chefboy dredged the tenders in egg, then made a breading that consisted of 1 part Atkins bake mix, 1 part finely crushed pork rinds and KFC type seasonings. We made a dill dip for them, 1 part mayo, 1 part sour cream, lotsa dill weed, and splenda to taste. The dip is slightly sweet and awesome. Tastes better if made a day ahead so the flavors gel. And a spring mix salad.

Yep, just spices and then fried w/o breading. I wish we had Popeyes here but we don't, only KFC and Bojangles and neither one of them has anything that is Atkins friendly. KFC even puts flour on its rotisserie chicken. :no
