Here's a great snack or dessert which is even better if you can find ricotta cheese that is not thickened with carbs as I did:
Mix 4-6oz ricotta with a few spoonfulls of canned coconut milk (I found a brand that had 1gcarbs/1/3 cup!) and stir in a little splenda.

I think its great that your creativity took into account the atkins limits, and produced a cool alternative. (I'll check out the cook book too.)
