  • Coconut dream!!

    Here's a great snack or dessert which is even better if you can find ricotta cheese that is not thickened with carbs as I did:

    Mix 4-6oz ricotta with a few spoonfulls of canned coconut milk (I found a brand that had 1gcarbs/1/3 cup!) and stir in a little splenda.

    THat sounds heavenly! I'll have to see if I can find the ingredients with the appropriate carb counts and try it.. Thank you for sharing!

        For new members, just remember that this will not be legal until Rung 3 of OWL. The ricotta cheese is from Rung 2, and the coconut milk is from Rung 3.

          Julierama,

          I didn't wait till rung 3. The rungs are only guidelines as stated by Dr Atkins in DANDR. You don't have to follow the rungs in the exact order and you can even skip rungs. Unless you have problems with dairy, I wouldn't worry about adding this snack after you complete your induction. In fact, I ate it during induction (oops!) It was great! Got me through when I needed something smooth, slightly sweet and dessert-like. Plus, its really nutritious for hardly and carbs - lots of calcium and a fair whack of protein - its really sustaining too.

          I'm glad people are enjoying this good-for-you snack.

          Btw - I highly recommend Dana Carpender's low carb cookbooks.

            Thanks Aries for your comments. I don't understand why it wouldn't be okay during induction if you count the carbs. The coconut milk has less than 1 carb and the ricotta has 2. In any case, it's very satisfying for all the reasons you describe. I know induction is strict, but I'd rather have something like that to keep me from blowing it all together.

              Barbara - I agree with you and my reasoning was the same.

              I think Dr Atkins wanted everyone to be cautious during induction and wanted everyone to achieve the maximum possible weight loss. I mean, it inspiring to lose weight straight off the bat. However, there are some people who are allergic or have a food intolerance to nuts and fresh cheese products and which for some people can slow down their weight loss so, to be safe, he left these foods out of induction. Many people on this site are super-strict about not deviating from the order of he owl rungs. However Dr Atkins doesn't strictly prescribe sticking to this order in DANDR.

              I also think many brands of ricotta have lost of added carbs as thickeners - and same with coconut milk so to further take out the risk he tried to make it easy and erred on the safe side rather than giving people too much to think about early on.

              Until you get used to low-carbing and reading labels like a hawk, its very easy when you're new to the game to pick something up thinking - oh hey its ricotta cheese, no carbs right?

                I guess it's because I've done this diet in the past and am very familiar with carb counts etc. that I don't worry about overblowing it on induction. But I can see where someone who isn't familiar with the plan could screw it up by going out of the box.

                  The rungs are there for a reason. Foods are introduced in order of glycemic index/glycemic load, and also in order of least problematic foods to most problematic foods. OWL should be a very scientific process. I do not see where it says that you can mix and match the order of the rungs. In fact on page 179, it says under "Rules of OWL" that you "add new foods in the order listed in the carbohydrate ladder."

                  True, you don't have to partake of every rung, especially if you happen to be allergic/intolerant to a food group. Mixing and matching rungs is frowned upon, because the whole idea behind Atkins is to regulate blood sugar. By adding in a higher carb food too quickly you run the risk of spiking your blood sugar and stirring up cravings.

                  Let's forget the rules of OWL for a while, and focus on the rules of induction. On induction, you are allowed to eat only off the induction foods list. At least half of your carbs must come from vegetables, the other remaining carbs may come from eggs, cheese allotment, organ meats, shellfish, special category foods, etc. A reasonable calculation of the recipe on fitday yields 6g carbs for a 4oz. serving. Are you skimping on vegetables to make room for this food? That's not a healthy way of eating.

                  This board also promotes Atkins the "by the book" and will always advise members to do as such. In my experience here (going on 3 years) I've seen so many people who bend the rules to suit their needs. Many times, those are the same people who crash and burn. The plan was devised as it is for a reason--because it works. The members who are on maintenance, the ones who have been highly successful, have done it by the book.

                  Do what you want, but my advice is to do things as "by the book" as possible if you truly want to do Atkins. If you make your own rules, you're doing your own plan.

                    Please chill. We're not children or fanatics. We're here to support each other - not reprimand which is what you're doing Its 2-4g carbs and less than 100 cals - there's plenty of room for veges once you're out of induction! Think of all that wonderful calcium that would take heaps more calories to obtain.

                    Perhaps you need to re-read the book.

                      Ariesdragon, thanks for the creativity and the carb counts. This is definitely something that could save one from the "on the edge, about to blow it" moments. A little bit of sweet with the calcium benefit...like a throw back ice cream of sorts. I think its great that your creativity took into account the atkins limits, and produced a cool alternative. (I'll check out the cook book too.)

                        Thanks!

                        I had to throw out my peanut butter and some low carb cookies I made last week (I can't stop at 1-2 tablespoons or a couple of cookies) but the coconut dream concoction is no problem -once I eat a serve I'm sated and don't crave anything else.

                        I think you'll love Dana's cookbooks.

                          If you're not going to follow the rules, that's fine, do what you wish, but please don't confuse others who wish to do a clean induction.

                            My purpose was to share a nutritious low carb recipe. I did not recommend anyone eat this during induction.

                              Again, when I first found the recipe, I didn't realize it wasn't meant for induction. Perhaps anytime someone posts a recipe they should note when you can eat it.
                              Personally I find your posts hostile and totally unfriendly so I will refrain from posting and use the site for information and recipes without getting involved.
