    Heidi.......... tastes just like regular pasta (which I realize I do not really miss). I tasted it and it was fine.
    AND.......... no sugar spikes for Mr. B.!!!

      Glad your hubby could eat it with no problems. That is a plus for us also seeing it caused no sugar spikes. Thanks Bren.

        Yeah I found it tasted exactly like real pasta too bren, my problem was it caused horrible cravings for me after....and you really do have to watch your portions.


        Like MOG i don't really trust their claims either..I had it once, put it away, not sure if i'll have it again due to the cravings (i did use a high fat cream sauce to offset it that didn't work).

          there is ALWAYS the YMMV factor with anything. I did a search on the inulin and was pleased to see it is not a chemical and actually plant based. Quite interesting. As always though, your mileage may vary!
          I, for one am still afraid, even after three years of the thought of gorging myself on pasta again.

            thanks you guys I have avoided pasta except on the very rare occasion but once in a while it would be nice to know it is there to have ....good to hear it did not cause a spike I will have to tell my low carbing diabetic patients about it ...thanks

              Another thing we now do is pasta is NEVER a main course, but a side dish. That is a change we have made and really works for all of us very well.

                hey Bren one thing about the pasta with the soluble fiber blend it takes it longer to move from the stomach and some diabetics see spikes 4-5 hours later when the breakdown of the fiber complex stars so be careful

                  Thanks 2big. I am assuming he had no problems as his reading was actually lower this morning then ususal..... was 97 and he has only been that low a few times in the morning. What do you think? He is never been a "fiber" person, so he did notice some discomfort a few hours after eating.
                  Kind interesting as everything we eat seems to be an experiment.

                  I should probably post this in the diabetic forum.

                    blast from the past - i was looking for a thread on dreamfields to see what others thought. i like to make mac & cheese with it (they sell elbow macaroni kind at my grocery store). GREAT idea to have it as a side dish. i didn't know that if you overcook it it lessens the value. nice thread!

                      oops sorry Bren missed that. Soluble fiber has been touted for diabetics to help with sugar controls because soluble fiber in your gut catches any food parts in its way like cholesterol or sugars and binds them inside its molecule with water sort of like playdough will hold lots of spilled kids food if you let the kid eat and play.

                        Hubby and I made the Penne pasta. We threw in sundried tomatoes, leftover cooked chicken, proscuitto, mushrooms, fresh broccoli and grated romano cheese. Yum! I didn't get the pasta hangover that I used to get from carbs either!

                          I've read on some diabetic sites that not only does overcooking it decrease its sugar controlling ability, but also eating it cold or warmed up.

                          Just an interesting side note.... I was watching an Italian cooking show yesterday and the cook stated that in Italy pasta is NEVER served as a main course, that it was strictly served as a small first or second course. So a pound of pasta could easily serve 8-10 people.

                            I had heard that too Megs, about pasta always being a side dish. In fact it was a while back when they were talking about the "low carb craze" on some TV show, an Italian was saying American's had to worry so much about carbs because we don't know how to eat correctly and eat huge plates of the stuff.

                              I thinkl my low carb pasta is better off left in the cupboard, for now. The memories of how much pasta I was eating 8 months ago leads me not to trust anything that resembles that epicurean experience to go in my mouth. Pasta is not my friend. Do you think a former coke addict would stop after one hit of imitation coke? Better not to chance it if there's any doubt, I think!

                                We have tested and tried many variations, and did a double test to make sure.

                                Cooking........... fine
                                Cooking and eating cold..............fine
                                Cooking and reheating............... NOPE! He had a spike after reheating.

                                I did do the Lasagna and he tested fine.......... but I way undercooked the lasagna noodles and added extra moisture to the pan before I baked it.
