      Where do you find Atkins bake mix? I've never seen it in a store.

      1st goal: 10 pounds by July 1 (Met this goal on June 22)

      2nd goal: 25 pounds by July 29

        I found this 'Clone' recipe for the baking mix which might be useful for anyone not able to get the 'real thing'
        1 cup soy flour
        2 cups soy protein isolate
        2 tablespoon baking soda
        1 teaspoon salt
        2 tablespoons Splenda
        Of course not 'legal' till the legume rung of OWL

            I agree...this is a good thread to keep going. I thought I'd post this recipe...it's really good. Got it from Bobby Flay's one show on Foodnetwork. Unfortunately, I don't have the counts for it.


            Cauliflower-Goat Cheese Gratin


            1 head cauliflower, cut into florets

            2 Cups heavy cream

            ½ lb Monterey Jack cheese, coarsely grated

            2 Cups grated Parmesan

            6 ounces goat cheese cut into small pieces

            Salt and pepper to taste



            Preheat oven to 400 degrees F



            Layer the cauliflower, heavy cream, and the 3 cheeses in a medium casserole dish. Season with salt and pepper. Roast for 20 – 30 minutes or until the cauliflower is soft and the sauce has thickened slightly. Remove from oven and let rest for 10 minutes before serving.

              Place all in an oven proof pan. Cover top of rolls with hot pepper sauce. Cover dish and cook at 350 until meat is cooked. I have no set time...just til the rolls feel firm.
              Has anyone ever tried adding mashed cauliflower to this in place of the rice? Do you think it would work? I LOVE cabbage rolls and stuffed bell peppers.

                Oh wow! I tried chinese fried rice last night.

                It's a whole new world!! My family loves chicken chow mein and my version has allowable foods! I can now have "rice" to eat too.

                Today I'm having the leftover fried rice with some shrimp mixed in and maybe some cabbage. VEGGIE HEAVEN.

                Cauliflower - who knew it could be used to many ways.

                  This is a GREAT thread! I just read the whole thing and copied LOTS of these recipes!

                  Here's my NEW recipe thanks to TGI FRIDAYS!

                  My husband had their battered and fried green beans (appetizer) and wanted me to make them in our deep fryer at home. I told him ok but no batter! I just fried fresh clean green beans until a little after they floated and ate them like french fries dipped into ranch dressing.

                  TO DIE FOR - Mmmmmmmm! I'm addicted! Finger Food is really happy food! These are better than french fries!

                    Ohoo, I've tried the roasted ones and they were good. Even hubby couldn't stop eating them. I'll have to try this version.

                    I love wings.. I hate the icky, mushy skin on them.. so I use to fry them with seasoning sprinkled on them.. THEN put garlic and parmesan cheese on them.. heaven. No batter, all crispy. Your green beans reminded me of that. Will have to do that this weekend MMM.

                      I made this yesterday and it totally filled me up! I will have to watch my treats. Even legal, too many treats is not good. I need to eat real food. It would be a wonderful replacement for a cake.. I envision a dollop of the whipped cream on top too.. maybe some fruit! Strawberries! Strawberries with chocolate cake! But I"d only eat 1/2 of the brownie

                        Mmmmmm good! I made the peanutbutter and chocolate brownie treat but added an extra tablespoon of butter and a tablespoon of ground Flaxseed. It can't be THAT many carbs!

                          This is a fav of my kids. You can measure things out per breast to get a more accurate account, but I figure I'm not using more than 2 tablespoons per breast and it's an equal amount of milk (whipping cream).


                          boneless/skinless chicken breasts
                          ranch dressing *equal amounts of dressing and cream
                          whipping cream
                          crushed BBQ pork rinds (I put mine through the blender to make them very fine)
                          Parmeson cheese (I used canned)
                          Seasonings


                          Wash chicken. Dip in ranch dressing and whipping cream mixed together. Dredge in pork rinds with seasonings. Place on cookie sheet sprayed with Pam. Sprinkle Parmesan on top of each breast. Bake 350 degrees for 40 minutes or until done - depends on size of the meat.

                          Enjoy! It's crunchy and I usually use the BBQ porkrinds from Walmart - they are puffier and grind down to a fine powder.

                          You can also use this with just about any type of meat. It's like shake and bake. It stays very moist.

                            Here is my favorite. I make a big batch of this then put some in the freezer for individual meals to pull out.

                            Stick To Your Ribs Chili
                            From: Di Bauer
                            2 pounds ground beef
                            1 heaping teaspoon minced garlic (about 1 large clove, fresh)
                            1 tablespoon red pepper flakes
                            1 14.5-ounce can diced tomatoes with green chilies
                            1 15-ounce can no sugar added tomato sauce
                            1 8-ounce can no sugar added roasted garlic tomato sauce
                            1 tablespoon cayenne pepper (or to taste)
                            1 tablespoon onion powder

                            1 teaspoon paprika
                            1/8 teaspoon cinnamon
                            1/8 teaspoon nutmeg
                            sour cream (optional)
                            shredded cheddar cheese (optional)
                            Brown the ground beef with the garlic and red pepper flakes; drain
                            thoroughly. Combine the browned meat/spices with all the remaining
                            ingredients except the sour cream and shredded cheese. Place mixture
                            in a crockpot and cook on high 3-4 hours or low 6-8 hours. Serve
                            hot, garnished with dollops of sour cream and sprinkles of cheddar
                            cheese, if desired. Freezes well for a quick lunch or snack.

                              The only thing you left out of the chili is the Ground Cumin and the kidney beans. Mmmm! I'm in the mood for chili!
