      OMG OMG OMG OMG OMG!!!!!!


      I just made the Salmon and dill sauce last night and brought it for lunch today. WOW!!!!! I doubled the recipe for the dill sauce to share with hubby but..... he's NOT getting any!!!! (sauce... he's not getting any sauce)

        Greek Seasoning Mix


        1/4 cup dried oregano leaves
        2 Tbsp. fennel seeds
        2 Tbsp. crushed dried lemon grass
        3/4 tsp. black pepper
        Combine herbs in a spice grinder or coffee grinder. Grind herbs to a fine powder, bottle in an airtight container, and label. Store in a cool, dry place. Yields about 1/2 cup. Use within 6 months.

        I add garlic salt or powder too.

        And heres our recipe for Old Bay Seasoning as well, its more readly available in the U.S. than here, so we make our own. Very good wish fish and chicken dishes.

        store in your pantry.
        INGREDIENTS:
        • 1 Tbsp. ground bay leaves
        • 2-1/2 tsp. celery salt
        • 1-1/2 tsp. dry mustard
        • 1 tsp. ground black pepper
        • 1/2 tsp. ground white pepper
        • 1/2 tsp. ground nutmeg
        • 1/2 tsp. ground cloves
        • 1/4 tsp. ground allspice
        • 1/2 tsp. ground ginger
        • 1 tsp. paprika
        • 1/4 tsp. crushed red pepper flakes
        • 1/4 tsp. ground mace
        • 1/4 tsp. ground cardamom
        PREPARATION:

        Combine all ingredients and mix thoroughly. Store in an airtight container and store in a cool place. Use with seafood or chicken. Makes about 1/4 cup

          Oh gee! In the Herb Rubbed Pot Roast recipe I forgot to put Paprika in the list of ingredients! So if anyone made it I apologize...to anyone who wants to try it I edited the post to include paprika.

            Here's a salsa I highly recommend to go with the flax crackers in the STAC forum recipe thread:

            CHECK fitday for the carb and cal amounts. I have no clue what it is per serving yet. It also doesn't store that well, so make either a smaller batch or be prepared to share with a lot of people.

            From BHG magazine:

            Avacado-feta salsa

            2 plum tomatoes, chopped
            1 avocado, halved, seeded, peeled and chopped
            1/4 cup finely chopped red onion
            1 clove garlic, minced
            1 Tbsp snipped fresh parlsey
            1 Tbsp chopped fresh oregano
            1 Tbsp olive oil
            1 Tbsp white (wine) vinegar
            4 oz feta cheese, coarsely crumbled

            1. In med. bowl combine tomatoes, avocado, onion, garlic, parsley, oregano, oil and vinegar. Stir gently to mix. Gently stir in Feta cheese. Cover and chill for 2-6 hours. Serve with flax crackers. Makes 12- 1/4 cup servings.

                  Here is a variation on the sweet flax meal muffins on this thread. I discovered the Olive Oil & Rosmeary Triscuits before I went on Atkins and I really liked them. Sometimes I want something ‘bready’, but salty instead of sweet, so I experimented with the flax muffin recipe and used some crushed rosemary that I had and I really liked them – tastes like herb bread to me and real good with some butter. It only made 10 muffins instead of the usual 12. I always eat 2 muffins, so I calculated the carbs based on 2 and it still comes out to 1 carb for 2 muffins, even with the Parmesan cheese.


                  SARAH'S FLAXMEAL HERB MUFFINS


                  3 eggs
                  1/4 cup plus 2 tablespoons oil
                  2 tablespoons water
                  1 cup flax meal
                  1/2 tsp salt
                  1 tsp crushed rosemary
                  1/2 teaspoon baking soda
                  1/2 teaspoon baking powder
                  2 tablespoons Parmesan cheese

                  In a medium bowl, beat the eggs with a fork. With a fork or spoon, beat in oil and water. In small bowl, combine remaining dry ingredients, then stir into egg mixture. Let stand 5 minutes. Spoon into 10 well-greased muffin cups (Pam works best). Bake at 350º 12 minutes, or until they seem set to the touch. Remove from tin at once to cooling rack. Store in refrigerator.

                  Makes 10 muffins

                  Serving size: 2 muffins
                  Can be frozen

                  Per Serving: 259 Calories; 24g Fat; 8g Protein; 8g Carbohydrate; 7g Dietary Fiber; 1g Net Carbs

                      MICROWAVE CHEEZITS!!

                      I took sliced American cheese and folded it into 12-16 little pieces of cheese. Laid them directly on the microwave plate and microwaved for about 1 1/2 - 2 minutes. Here is what they look like. Now you will notice that the ones in the middle of the plate were not quite done. I simply removed the ones that were done and re-nuked the rest of them. You just have to keep an eye on them til they are ready.

                          Bug, I do this similar with cheddar. I put a shredded blob in the middle of the plate, and nuke it... when it is slightly cool, I roll it like a taquito.

                              Thought I would add this.

                              One of my fave recipes for stew meat. I didnt read all the way, and thought you were just looking for stew. IT is called stinky beef... and is yummy.

                              1 lb beef
                              2 cloves garlic
                              .5 cup chopped onions
                              .5 c chopped green onions
                              1 jalapeno pepper chopped
                              3 T soy sauce
                              1.5 T worcestire sauce
                              splash vinegar

                              put .25 c olive oil in the pan and get it warmed up
                              add in the meat and cook until just brown
                              add in the veggies and fry up with the meat
                              add in the sauces

                              for less heat, dont put the jalapeno seeds in
                              for more, use the seeds
                              I, of course, add in lots of crushed red pepper and cayenne to the meat while it is cooking.

                              This is yummy. Total recipe is 1412 calories, 110 g fat, 23 g carbs, 82 g protein.

                                I just made this recipe with some tweaks.
                                I used almond Flour instead of Walnuts. Olive oil. 1/2 cup splenda and about 10 drops of liquid Stevia. This came out awesome. Geman Chocolate cake tasting!!
