Re: Desserthorns' 2 Week Clean Induction chal.

Thanks Desertthorn - I was afraid that if I eat 2 pounds of meat and fat, the calories will be excessive, and the extra protein converted to carbs by my body or something. I'm afraid to add much more - but that's just the menu up to 5pm. Then I'll possibly get into something else but aren't the veggies already at the limit? And I can down a roast chicken single-handedly - easily 1500 calories?
I ate 1 smothered steak 7:30-8; celery& cheese 8:30-11am; next will be the other during the afternoon. I'm a nibbler & sipper - still working on that cup of cold black coffee.

Morning everyone! Can anyone tell me what the limit is for cream? I like to have cream in my hot tea so don't know if I can have any in any of the desserts that call for it?

I see 2 to 3 tablespoons a day is allowed, note carb content in the What foods can be eaten on Induction? thread.
Way to go Morgan82!! I hope I get a whooshie soon! But aren't we supposed to saty off the scales awhile?

OMG morgan!!!! 5lbs?!!!! how did you do it?! envyyyyyyyyyyy

          oh well.

yeah, the lettuce thing fills me with dread....maybe I can make it a little better today...
the one good thing about cooking it down is I can just shovel it in quickly. I can't even imagine getting through 2 whole big cups of salad.

i think everyone should do what is best for them on the scales issue, whatever helps motivate you the best. for me, i like to weigh myself every morning because i keep losing and it makes me want to not cheat that day! some people i know only check once a week or maybe never. i think if i start to stall though, i will probably not weigh so often.

on another note, coming to this thread to post and check in with you guys is really helping me. makes me feel like i have to more accountable i suppose, and to know that other people are struggling each day to eat right.

              jimenitayo:

can you find a salad dressing you really like to add to the lettuce? maybe that would help hide that taste you dont like? add a lot of tuna or chicken to it too? i used to hate lettuce too.

i also tried a new recipe recently with cauliflower. it was basically a caserole and i hate cauliflower raw, but this tasted great to me, and had the texture and flavor of bacon and eggs basically. plus it would be some veggies.

steam 2 cups cauliflower, then put in a greased 8x8 dish
in a bowl i mixed 8 tablespoons sour cream, 1 cup shredded cheddar cheese, and 4 slice of bacon that i chopped up, plus some pepper. spread that mixture over the cauliflower and put it in the oven for 35 minutes at 350.
about 1,000 calories and 20 carbs total. i ate half for a meal and was stuffed!

i hope you can find some veggies that you like!

Re: Desserthorns' 2 Week Clean Induction chal.

Since this is our place for this challenge, and since I've got a lousy memory at times I decided to copy the induction foods list, slightly condensed and alphabetized.

Source thread: What foods can be eaten on Induction?
These are the foods on the Atkins web site.
Note: Bars, shakes and other low carb foods are not included in the foods as listed on the "How To Do Atkins" part of the website. If you chooose to use them that is your personal choice. If you aren't happy with your weight loss then stop eating those foods and see what happens. There isn't any way to redo your induction because the opportunity is already used up. Make educated decisions about any food you put in your mouth while doing induction and any other phase of Atkins. Know those carb counts before you eat it. And for those that don't bother to read the book, liberally doesn't mean stuff yourself, it means eat enough to satisfy your hunger and stop.

                Acceptable Foods
These are the foods you may eat liberally during Induction:
all fish, all fowl, all shellfish, all meat, all eggs

*Oysters and mussels are higher in carbs than other shellfish, so limit them to four ounces per day.

**Processed meats, such as ham, bacon, pepperoni, salami, hot dogs and other luncheon meats and some fish may be cured with added sugar and will contribute carbs. Try to avoid meat and fish products cured with nitrates, which are known carcinogens. Also beware of products that are not exclusively meat, fish or fowl, such as imitation fish, meatloaf and breaded foods. Finally, do not consume more than four ounces of organ meats a day.

OTHER FOODS THAT ARE ACCEPTABLE DURING INDUCTION
                Cheese
You can consume three to four ounces daily of the following full-fat, firm, soft and semi-soft aged cheeses*, including:
cheddar cow, sheep and goat cheese cream cheese Gouda mozzarella Roquefort and other blue cheeses Swiss

*All cheeses have some carbohydrate content. The quantity you eat should be governed by that knowledge. The rule of thumb is to count 1 ounce of cheese as equivalent to 1 gram of carbohydrate. Note that cottage cheese, farmer's cheese and other fresh cheeses are not permitted during Induction. No "diet" cheese, cheese spreads or whey cheeses are permitted. Individuals with known yeast symptoms, dairy allergy or cheese intolerance must avoid cheese. Imitation cheese products are not allowed, except for soy or rice cheese but check the carbohydrate content.

Vegetables You can have two to three cups per day of:
alfalfa sprouts arugula bok choy celery chicory chives cucumber daikon endive escarole fennel jicama lettuce moche mushrooms parsley peppers radicchio radishes romaine lettuce sorrel
These salad vegetables are high in phytonutrients and provide a good source of fiber.

Other Vegetables You can have one cup per day of these veggies if salad does not exceed two cups.
The following vegetables are slightly higher in carbohydrate content than the salad vegetables:
artichoke artichoke hearts asparagus bamboo shoots bean sprouts bean sprouts beet greens broccoli broccoli rabe brussels cabbage cauliflower celery root chard collard greens dandelion dandelion greens eggplant hearts of palm kale kohlrabi leeks okra onion pumpkin rhubarb sauerkraut scallions snow peas spaghetti squash spinach string or wax beans summer squash tomato turnips water chestnuts zucchini
If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

                Salad Garnishes
crumbled crisp bacon grated cheese minced hard-boiled egg sauted mushrooms sour cream

Spices All spices to taste, but make sure none contain added sugar.
basil cayenne pepper cilantro dill garlic ginger
Herbs oregano pepper rosemary sage tarragon thyme
For salad dressing, use oil and vinegar (but not balsamic vinegar, which contains sugar) or lemon juice and herbs and spices. Prepared salad dressings without added sugar and no more than two carbs per tablespoon serving are also fine.

                Acceptable Fats and Oils
Many fats, especially certain oils, are essential to good nutrition. Olive oil is particularly valuable. All other vegetable oils are allowed, the best being canola, walnut, soybean, grapeseed, sesame, sunflower and safflower oils, especially if they are labeled "cold-pressed" or "expeller-pressed." Do not cook polyunsaturated oils, such as corn, soybean and sunflower oil, at high temperatures or allow to brown or smoke.

Butter is allowed. Margarine should be avoided, not because of its carbohydrate content, but because it is usually made of trans fats (hydrogenated oils), which are a serious health hazard. (Some nonhydrogenated margarines are available in health-food stores.)

You don't have to remove the skin and fat from meat or fowl. Salmon and other cold-water fish are an excellent source of omega-3 fatty acids.

Remember - trying to do a low-fat version of the Atkins Nutritional Appr. will interfere with fat burning and derail your weight loss!

                Artificial Sweeteners
You must determine which artificial sweeteners agree with you, but the following are allowed: sucralose (marketed as Splenda), saccharin, cyclamate and acesulfame-K. Natural sweeteners ending in the suffix "-ose," such as maltose, fructose, etc., should be avoided. However, certain sugar alcohols, such as maltitol, do not affect blood sugar and are acceptable.

Saccharin has been extensively studied, and harmful effects were produced in the lab when fed to rats only in extremely high doses. The Food and Drug Administration (FDA) has removed saccharin from its list of carcinogens, basing its decision upon a thorough review of the medical literature and the National Institute of Science's statement that there is "no clear association between saccharin and human cancer." It can be safely consumed in moderation, meaning no more than three packets a day. Saccharin is marketed as Sweet'n Low.

We discourage the use of aspartame (marketed as NutraSweet and Equal) because of clinical observations that it slows weight loss in certain individuals. The FDA has approved the herb stevia for use only as a supplement, not as a sweetener.

The Atkins preference, however, is sucralose (Splenda), the only sweetener made from sugar. Sucralose is safe, noncaloric and does not raise blood sugar. It has been used in Canada for years, and the FDA recently approved it after reviewing more than 100 studies conducted over the past 20 years. Note that each packet of sugar substitute contains about 1 gram of carbohydrate, so don't forget to include the amount in your daily totals.

                Acceptable Beverages
Be sure to drink a minimum of eight eight-ounce glasses of water each day, including:
Filtered water Mineral water Spring water Tap water

Additionally, you can have the following:
Clear broth/bouillon (not all brands; read the label)
                Club soda
Cream, heavy or light (limit to two to three tablespoons a day; note carbohydrate content)
                Decaffeinated coffee or tea*
Diet soda made with sucralose (Splenda); be sure to count the carbs
Essence-flavored seltzer (must say "no calories" and should not contain aspartame)
Herb tea (without barley or any fruit sugar added)
Lemon juice or lime juice (note that each contains 2.8 grams carbohydrate per ounce); limit to two to three tablespoons
*Excessive caffeine may cause unstable blood sugar and should be avoided by those who suspect they are caffeine dependent. Everyone should try to avoid caffeine. Grain beverages (coffee substitutes) are not allowed. Alcoholic beverages are also not permitted during Induction; those low in carbohydrates are an option, in moderation, in later phases.

                Special Category Foods
To add variety, each day you can also eat 10 to 20 olives, half a small avocado, an ounce of sour cream or three ounces of unsweetened heavy cream, as well as two to three tablespoons of lemon juice or lime juice. But be aware that these foods occasionally slow down weight loss in some people, and may need to be avoided in the first two weeks. If you seem to be losing slowly, moderate your intake of these foods.

                Convenience Foods
Although it is important that you eat primarily unprocessed foods, some controlled carb food products can come in handy when you are unable to find appropriate food, can't take time for a meal or need a quick snack. More and more companies are creating healthy food products that can be eaten during the Induction phase of Atkins. Just remember two things:

Not all convenience food products are the same, so check labels and carbohydrate content.
While any of these foods can make doing Atkins easier, don't overdo it. Remember, you must always follow The Rules of Induction.

Now with that in mind, remember to aim for 65% fat, 30% protein, 5% carb ratio of daily caloric intake. I went to www.fit.com to test today's intake, and there's room for mayo on fried eggs & bacon tonight - ymm

And good news for you who hate lettuce - with all those other veggies to choose from, you can surely measure a mixed variety of cut up "salad" veggies by the cup to a pot of water or clear broth and make hot soup...

Re: Desserthorns' 2 Week Clean Induction chal.

Day 1 - have kept to it today - had an early start and was worried I might eat all day but it doesnt seem to have happened - yet anyway

Breakfast - 3 egg omlette and Sanatagen Gold a-z vits
Dinner - 6oz bacon - crispy and two babybells
Tea - 1/3rd portion of Whooshie - looked horrendous and I cooked it much
longer than it stated and added extra mustard and garlic but its really
tasty - not very apppealing to the eye but tastes great
                  Salad

Feel good - glad I decided to try a new recipe to add a bit of interest to the food. I have the old 1999 version of Atkins - the new one is still on order - if anyone has any thoughts on my posts let me know - all advice and tips apperciated.

Re: Desserthorns' 2 Week Clean Induction chal.

It is actually hamburger pie but was nicknamed whooshie because people tend to get a whoosh overnight after eating it. This is the recipe I used:
                      Hamburger Pie

                      2lbs of ground beef(lean)
                      1 package of cream cheese
                      2 tsp yellow mustard
                      2 tsp horseraddish
                      garlic powder to taste
                      salt and pepper to taste
                      dehydrated onions to taste

1st combine cream cheese, mustard, and horseraddish, garlic powder, salt and pepper, and dehydrated onions in a mixing bowl. Smooth it all out so when its done it will be a creamy yellow almost like the consistancy of the yolk of deviled eggs. Put aside, and split beef in half. Make a large hamburger patty and put into a round cooking dish(or square if you dont have round). Sprinkle with some salt and pepper and spread cream cheese mixture over the hamburger patty and take the other half of beef and make into another patty. Put on top of the patty with the cream cheese mixture and pinch the sides closed sprinkle with salt and pepper. Bake at 325 for 55 min or until well done. Slice like a pie and enjoy!

I have seen where people have tweaked it, think possible putting real onions instead of the flakes. Maybe someone else will break in and say the differences of the two.
I made this and my dd enjoyed it also. Last night instead of forming into a pie I just fried off the meat and mixed it in a bowl.

Dropped a pound overnight. Can't say thats a big whoosh but I will take it. LOL!

                      KO

Re: Desserthorns' 2 Week Clean Induction chal.

                        Hi morgan

                        those are great ideas.

im kinda frustrated with the whole 2 cups of veggies thing. because I love all kinds of different veggies, cauliflower is one of my favorites. the problem is the 2 cup list, i dont like many in there. I thought I was safe with cabbage and spinach, and it turns out those aren't on the salad list!

I love peppers, and I was eating the 2 cups, but it used up all my carbs. I like cucumbers, but I can't imagine a nice way to get in 2 cups a day of em. i loooove mushrooms, but they're too expensive to make them a staple. so i'm back on lettuce.

today I tried to make a soup, and mix it in with roasted pepper and parmesan, and I was able to gulp it less painfully.

I honestly can't picture dealing with 2 cups of lettuce every day. maybe I'll get used to it.

thanks so much for the ideas, though!

Bonniestomper - hi If you go to the top of the page and click 'search' on the dark blue lines you can put any word in eg whooshie, cream cheese and it brings up the links on those subjects - saves trawling through all the boards like I did for the first weeks. Thanks for the lists, have printed them off for ease - they are more detailed than anything I have.

Re: Desserthorns' 2 Week Clean Induction chal.

I am on day four and down 3 lbs. I need to drop 15lbs or so.

I found a link in anoter forum and it gives a site that has many induction menus and also other low carb menus. I tried a few of her dishes. They were great!! I don't think sour cream is leagal for induction is it? A couple of her induction menus includes a littler sour cream.....

Let me know what you think of the site......

Here is the web address. I hope is comes out as a link for you.

That's one of my most favorite sites on the entire web! Here's the addy: http://users3.ev1.net/%7Efontlady/ I've yet to try a recipe there that I didn't like! The spinach lasagna is soooo awesome.
