        Developed a 'fondness' for straight up over the years......I miss it sometimes....

              Hey, Kristy... I eat pumpkin alot, nowadays. I don't like it plain, though. I put about a cup of pumpkin in a bowl, add 2 ounces of cream cheese (you probably can get away with less), sprinkle some cinnamon in it, and add about 3 drops of Liquid Splenda to it. I heat this in the microwave until it is warm and stir it up really well. While I wasn't a big fan at first, I have really grown to like it. (the warmer, the better)

                Hmmmm...I have cream cheese, cinnamon, and a packet of stevia here at work...might try that. I never could find liquid splenda.

                    OMG! This is soooooo yummy but before I eat the whole bowl...is it right that my pumpkin has 4 grams of sugar per serving? carbs are 9 grams and fiber is 5...only ingredient is pumpkin.

                      Finally back to losing after a nasty weeklong stall/gain fluctuation. It's that darned aspartame that pops up in the Diet A&W I was drinking. Never again will I "treat" myself with diet soda. It stalls horribly. (for me at least). I should have read the label more closely. I was getting all my water in, but just the tinest bit of aspartame and it doesn't matter. No fat gnomes visit in the night to whoosh away my lovehandles.

                          Kristy, it is fine that it shows the 4 grams of sugar because this is the naturally occuring sugar that occurs in the vegetable itself. You are right on track by checking the label and noting that the single, only ingredient is pumpkin. I am thrilled that you like it, because it is very good for you... an excellent source of fiber and makes me feel like I am indulging because it tastes like a dessert. I often have this for breakfast because it is super easy to prepare.

                            I can tell it will be one of my all time favs (breakfast or dessert)...I love pumpkin pie so this is right up my alley...I guess it does count as my 1 cup of "other" veggies so no broccoli tonight. I have been trying to eat 1 cup cucumbers (read they help with water weight), 1 cup romaine lettuce, and 1 cup broccoli every day. My coworker saw me making it and said it looked like what she found in her baby's diper. LOL! I don't care...it was good! And since I didn't know the name of this dish...I listed it in my food diary as "hot pumpkin mess"...Thanks!

                                oh man, NOT feeling well today. yesterday i found i didn't eat enough at all (815 cals). I went out to eat and ordered a cheese plate appetizer (hehe, very atkins friendly!) and a salad. The salad turned out to be one of those very small side salads...that was just spinach. I was really disappointed , especially because everyone else in the group ordered dessert and I was still very hungry.

                                That said, I didn't cheat. But I got back to the room at 10:30, I thought my best bet was just to go to sleep hungry. So i woke up today feeling totally drained.

                                But I just went to eat a nice salad and chicken. Still feeling kinda yucky though.

                                Maybe it's the two final exams I have tomorrow.

                                Yeah...that's probably it, actually.
