    Good morning. I don't know what happened last night but I kept looking for 'something' to satisfy me starting at 9:30. So, first I had two eggs and cheese. That didn't do it. Then I made a 'legal cookie'.....then an Atkins bar (I know I'm not supposed to have yet, but I thought it was better than the Hershey's bar in the freezer). I don't know what got into me! And I had such a model day up until then! At least I drank all my water and worked out.

    But today is a new day and I'm going to make it a good one. I'm going to look up something to make with cauliflower tonight--that mysterious, undiscovered vegetable in my fridge....
    FINISH IT!

      My two favorite cauliflower recipes:

      1. Steam the cauliflower until tender. Break into smallish chunks. Place in a casserole, and brush or spread on some ranch dressing (not too much, but enough to coat the top). Grate enough cheddar cheese to sprinkle on top of that, then nuke or bake in oven until the cheese is melted.

      2. Steam the cauliflower until tender. Place in a large mixing bowl. Add softened brie cheese (I don't know how much - enough to taste yummy) and blend until smoothish (it'll be a bit lumpy). Sprinkle with nutmeg, and enjoy!

        Oh Baby, that horrible search for "Something". I don't know how many times I've uttered the phrase, "I WANT SOMETHING" but never know what that something is. I think it's part of the addiction. One thing about this woe, I've noticed that search happens a lot less frequently (thankfully!). Cauliflower rocks!

          Ok, new cauliflower recipe here:

          cover bite sized pcs. of cauliflower w/ mayo, cover with shreaded cheese bake at 350 for one hour. YUM

          Had a wonderful suprise last night. DSIL invited us to dinner and is aware of my dedication to Atkins. She has a small garden even though they have never been "veggie eaters". Well, they asked me about what kind of menu they should have for me and I said, "don't worry about me, what I don't eat in starches I will make up for with whatever meat and veg you have". Well, she sauteed swisschard and baked some spagetti squash for me. I have never had either and let me tell you something! Awesome, just plain awesome. It was great because the rest didn't want to get near those veggies so they were basically MINE ALL MINE!!! What a treat. She even sent me home with more swiss chard out of her garden. Guess what I am having for dinner tonight?!?!

          Went to dinner at a new Italian restaurant over the weekend. Italian can be scary with all that P A S T A, but I always can rely on a salad if there is nothing else. I found a eggplant entree (the Eggplant parmesan was breaded) that looked "safe". It was eggplant sliced and stuffed with ricotta and spinach with marinara and mozz baked on top. I think it was called Eggplant Rolletini (?). Not exactly induction friendly but fine for my rung! Probably ate too much of it but WOW ...delish!

          Enough food talk. Getting hungry so I guess it is time to eat lunch.

              You can make baked cauliflower in the oven with garlic over the top and chedder cheese, it's so good, or mash it up into baked potatoes.

                Hey everyone ......... my name is Heidi and I just found this forum yesterday while searching for a support place as I am getting myself back on trach with the Atkins lifestyle. I am a (almost) 41 year old female. Married and Mom to seven, grandma to 2 (3rd on the way). I "did Atkins" 9 years ago and kept my weight off for 2 years. Then through a series of events over the years gained it all back.......... so here I am in my 11th week of this journey and planning this time to keep it off forever and not forget the Atkins way of life ever again. Things are different this time the weight is not "falling off" like it seemed to the first time around but I am losing steadily and happy with how it's going. I do have a thyroid condition so I will check out the information there as well but thought this might be a wonderful place for me to settle in if you all are open to another one jumping on the ship.

                I look forward to getting to know you and learn from you as we do this together!

                  Hey Heidi, welcome to the forum. The weight is going to come off slower, but it will come off. Mine is a lot slower, and I have learned a great deal of patience during this WOE. Just hand with us STACERS, we are all in the same boat.

                        All of these recipies for Cauliflower sound so good I used to make a mock mashed potatoes all the time and loved them. It's nice to get fresh ideas on how to make the veggies different! Today is my grill day ........ I try and grill twice a week enough stuff to last the family for at least a few days. Today I am grilling Chicken breasts, chicken sausages, hamburgers and hotdogs ........ it all smells so good!

                        What do you all do to prepare foods ahead? Do you do this so it's ready and you don't get tempted to eat something you should not? I call them my survival techniques ....... can you share yours???

                            Hi, Heidi, I have thyroid condition as well--in the process of trying to find a new dr. to see if that is stalling my weight loss. This time seems a little slower for me as well (though I'm just on week 3). I'm new here also, and it's been a great place for new recipes. Best of luck!

                              yum. I would've never thought of using brie. Can't wait to try it.

                                Make sure you see an endocrinologist!! It makes all the difference in the world to see someone who specailizes in the endochrine system!
