      Hi tomorrow I'll be perfect! I use 2 eggplants for a 9x12 baking dish. Thinly slice the eggplant length wise and brush w/ olive oil on both sides. On a non stick pan, grill both sides of eggplant untill tender, set on paper towel single layer. Set aside. Using your favorite pasta sauce, spoon sauce on bottom of baking dish just to cover w/ sauce,layer eggplant like you do lasagna noodles on top of sauce, then spoon more sauce just to cover. Then spoon ricotta cheese over that layer of sauce, then layer more eggplant,repeat layers. Sauce being last layer, sprinkle top layer with parmesian cheese, cover and bake for 40 - 45 minutes in a 350 degree oven, then uncover and bake for additional 10 minutes. Let cool for 15 minutes before cutting. The trick is to cut your eggplant as thin as possible. Enjoy!

        The night before I always make about 3 cheese crips and chicken and I make sure i have plenty of spinach lettuce in bags for work the next day. I keep a jar of pickles and olives readily available. . I keep celery and red pepper strips with cream cheese around for snacking. I get up 15 min early in the morn. to make eggs and bacon.
        I always get my food ready the night before, you have to do that, or you'll end up with no food and either starve or cheat. I had to learn to PLAN, PLAN, PLAN!!!!!!!!! and then PLAN some more.
        Also, when you are past induction and going into rungs, you can expand so much more with gualcamole nuts, berrries, dom's cheesecake, minute muffins etc...so it gets much better.

          Oh ya, let me know if you tried this and if you liked it. I forgot to mention I use a meat sauce for mine but it's very good with out. Also you can grill your eggplant on a gas grill and roll ricotta cheese up in each slice then pour over sauce and top with parmesian cheese and bake for 20 minutes. It's very awesome!

            Fed-up today,,, stupid husband being grumpy and spoilt a family meal out, which is something we really do.

            I took an HUGE amount of will power to not drive to the supermarket and buy chocolate and stuff,,,, im still seething now,,,,

                    This is how I make them. I find using extra sharp cheddar cheese, or pepper jack works the best. I spray pam on a glass salad (not dinner) plate and put a 1" x 1" cube of cheese in the center, then cook it from 2-3 minutes. Every microwave is different, so you will need to experiment the first few times. It should turn out to be this big round crisp flat piece of cheese, not rubbery at all, and not burnt, it needs to be crisp. idon't panic when you see it sizzling int the microwave, that's ok, it will look wierd, but hang in there. And also if it starts smelling burnt, stop immediatly. Like i said, it will take a few tried to get it perfect. It is great to use in place of tortilla chips. I use them in taco salad, to scoop up salsa, or guacamole etc....or just eat them plain.
                    Also, i have heard of people cooking them in the oven, but I don't know how to do that, You'll have to ask around. Hope this helps.

                        Blazing--I love that idea to use them in a taco salad! I tried making that 'legal cookie' with flax seed last night which has a similar cook method, but I had trouble pulling it off the plate (I put wax paper underneath)--I still ate, of course (!) but it came apart in small pieces. Wonder how the cheese crisp will come off...

                          Parchment paper will help with the cookie not sticking in the micro. Also if you decide to bake the cheese chips in the oven use parchment paper. Hope that helps.

                                I did mine on a corningware plate in the micro for 1 1/2 minutes They did dtick a little but all I did was slide the tip of a sharp knife under and it lifted right up! I did three on the plate ......... yummy!!!! they were crunchy and delicious! Thanks for the idea!
