    Its a cold bitter day here and normally (B.A.) I would be making a big pot of gumbo...instead I made smothered cabbage and smoked sausage. No beans and rice either....

    do any Derby Girls know how to make a roux without flour? would soy flour work? AIYEEE but Mardi Gras is right around the corner.....

      Sorry! I don't know how to do a roux without flour. My neighbor's mother in law would tho! She browned her chicken in the pot real nice and slow and used that as her base to make the gumbo. Sounded like really thin gravy to me.. but I was able to try it once and you'd never known it wasn't made from roux. I'm wondering if she lighted dusted the chicken?? It would be much less flour than your standard roux. Just a thought. Cold weather is headed down south.. now ya got me craving a gumbo.

        Thanks Rachel...I guess I'll experiment some...I see you live in Acadiana? I lived in Broussard (by Lafayette) a million years ago, lol.

        I've got a real 'taste' for a good gumbo...(and oh no!, potato salad on the side)

          I thought gumbo was thickened with okra. This is coming from a person that has never tasted gumbo, because my mouth doesn't come anywhere near rice. I have a low carb thickener called ThickenThin not/starch thickener. It's made from vegetable gums: guar, carob, xanthan, acacia. It makes a nice, thick gravy. You can find guar gum in most grocery stores.

            good idea Sunny - I'll try to find it next time I'm in the City. I've decided gumbo may be a slippery slope for me so I may just have a big ol pile of steamed shrimp on Fat Tuesday *grin*

              Ooo, ya'll have me craving some of my dad's seafood gumbo now, hehe. Steamed shrimp sounds good too, though I usually boil mine with some crab boil in a pinch

                I don't know what crab boil is, but the way I make my spiced shrimp is with Old Bay, vinegar and salt--Old Bay is 100% legal ingredients. Yum! For once, I didn't have shrimp on New Year's Eve--had crab cakes instead. Now I want shrimp!

                  Good Evening Ladies!

                  Some day I hope to post my mountains that I live in.
                  Such beauty surrounds me around every corner. The tall Douglas Firs stand tall amungst the tall Cedars and Sugar Pine covered in snow. With the bright blue sky shining above, Magnificant! The beauty of the Rogue River winding down from Crater Lake makes its way through the lava tubes that disappear under ground and then reappear down stream. Eventually flows into the Pacific Ocean. Amazing! The mountain lakes full of Rainbows and German Browns just waiting to bite your hook and Yell Fish On!
                  Hiking on the Pacific Trail and the wildlife you encounter is so awesome, not to mention the breathtaking Mountain Top Views of the Cascade Mountains. It's my heaven on Earth. Feeling spray from a waterfall thundering at your feet is empowering. God is Good!


                  I had a wonderful day today. I worked out first then got some ironing caught up. My TOM decided to show up Just in time for my Dr. Appt. Tuesday. He's got really evil scales too, LOL. Here's my menu;

                  BREAKFAST: 3 egg cheese omelet, 3 slices turkey bacon, decaf w/ hvy crm, water.
                  LUNCH: tuna out of the can, 1/2 avacado, water
                  DINNER: Meat loaf, cauliflower w/ mayo & must sauce w/ Cheddar, mixed green salad w/ cuc, olive, vinegar & olive oil, water
                  WATER: 100 oz
                  EXERCISE: 25 minutes gazelle @ 3 mph
                  TOTAL: 561 minutes

                    How's about this for "wild"life? This is on the Skyline Drive about 100 feet from the Appalachian Trail. This is my grandson when he was about 4-years-old.

                          Had to take an ironing break. Gosh I hate doing it... maybe that is why I have so much...

                          Sherri: My stepdaughter lives in Nashua. My DH use to work there.
                          Glenda: It is beautiful there. Southern NH was not a wonderful place but a place to live. I had a real hard time adjusting... See Sunny, I did grow up in Georgia..and yes, i had that GA Peach twang. A lot of it gone now since I've been gone 20 years.

                          Sunny: You really need to come out to Colorado. It is absoluetly beautiful here.

                          Cat: Good to see your getting further with your exercise. I'm hoping that your hump about exercise with come all these miles and visit with me.

                              Very good pic of your family (and of you). We're doing the challenge from 1/1/08 to 4/01/08 (is that right?). Just let us know how many minutes you pledge to exercise for that time period.
