ooooo, thanks for all the tips you guys! I tried my first raw jicama today and I loved it! Very sweet, crunchy and tasty! And you can't beat close to half of the carbs being fibre.
Those mock hashbrowns look AWESOME!!
I've cut up the entire thing and put them in tupperware with water. I hope that keeps them a few extra days. I've already had my limit for today.
And yes, the inside was nice and white...although the outer part was starting to turn.....was still nice and crunchy though. Thanks for the tips. I'm sure I'll be at the grocery store again soon scoping out the good ones.
