    ooooo, thanks for all the tips you guys! I tried my first raw jicama today and I loved it! Very sweet, crunchy and tasty! And you can't beat close to half of the carbs being fibre.

    Those mock hashbrowns look AWESOME!!

    I've cut up the entire thing and put them in tupperware with water. I hope that keeps them a few extra days. I've already had my limit for today.

    And yes, the inside was nice and white...although the outer part was starting to turn.....was still nice and crunchy though. Thanks for the tips. I'm sure I'll be at the grocery store again soon scoping out the good ones.

      I bought a jicama last Saturday to make the mock cinnamin apples, but haven't cooked it, yet. I think I got some better ideas here (namely the mock hashbrowns)! I might peel this baby tonight to try a bite. I can't wait! Anybody ever try to puree it with a little butter and cream to make jicama-taters? LOL I might have to try that, too!

          Hee... I bought 4 small ones yesterday and decided to do an experiment. One I cut up and put in the fridge for use now, two I chopped up and then bagged them and sucked all the air out with my food saver, and the last one I put whole (uncut) in a bag and sucked all the air out too.

          I want to see if a) the cut up ones stay fresher in a foodsaver bag, and b) will storing whole ones in a food saver bag keep them fresh longer for when I'm ready to use them. I'd like to try freezing them, that'll be my next experiment I guess.

          I love jicama. I honestly could live on that given half the chance

              I tried to fry jicama and onions, thinking they would taste like fried potatoes. WRONG!! The jicama would soften up, so we ate crunchy fried jicama. It was to sweet tasting for me. I won't do that again. I was NOT fond of this dish. LOL

              Here is one recipe that I do like. Slice radishes and fry them in olive oil or vegetable oil and salt and pepper. Now they aren't bad.

                I just checked out your weightloss pics and you look absolutely AMAZING! It's incredible how fast you could see a difference, but you look so much younger, too. It's weird how losing weight makes us look younger.

                  I tried the mock apples and cinnamon yesterday. Very nice! I think I used too much cinnamon though....1/2 tsp for 1/2 cup jicama. Next time I'll use a little less.

                      I've made the mock cinamon apples a couple times now. Not bad, though I like the jicama sliced pretty then so it doesn't taste quite so fiberous. I saw a faux potato chip recipe for them that I might try.

                        Actually, yes...surprisingly enough they did! They are sort of sweet so that coupled with the cinnamon definitely renders the taste similar to apples!

                          I don't know if it's just the jicama I bought or what, but I find them very juicy and I can't say I found them fiberous. But I have seen other people post the same thing. Maybe I lucked out on the one I chose...hehe

                            Where are you guys finding jicama? What vegetable is it close to the in grocery store? I scoured my produce department last night and could not find it for the life of me. Any suggestions?

                              I found mine at Safeway in the 'specialty' veggies section. I was surprised as how easily I found them, actually.

                                I get mine at Stop N Shop, but they run out VERY quickly. You almost have to get there on Monday when the trucks come in to get it because they order so little.
