    Re: What's For Dinner Tonight?????

Think I'll be having my eggplant tonight along with grilled salmon. I'm still fairly new at this and don't want to eat the same thing over and over. I tend to do that with other diets plans...I stick with what works. Then I get bored. Now, since I'm considering this a new WOL, and not just a diet, I don't want to be stuck in a rut. I'm getting great ideas on the boards.

    Thanks to all for sharing.

I'm going to a distant relative's house for supper tonight. According to her husband, she is cooking a pork roast, a pasta dish (I can't eat), a salad and some kind of cooked vegetable. So, I'll cobble my meal out of that.

I have no idea what I am eating for dinner.
I am a little down because I have not exercised in a while.
today is the day to get back on saddle.

Tonight I had some boiled shrimp, a very small portion of brocolli, sliced cucumber, 6 tiny grape tomatoes and as little Marie's creamy garlic dressing to dip the shrimp in.

Shrimp--sauteed with garlic and olive oil
Zucchini "noodles"--take a zucchini, slice it into long paper thin slices (a wdie vegetable peeler does a great job), then slice again into long "noodles", mix with about a teaspoon of salt and let it sit for about 10-15 minutes. Drain and rinse the zucchini. Sautee the zucchini until tender, but not mushy. This can also be done with cucumber (don't use the seed area).

Thanks for always starting this post Megs!

I'm actually in OWL, but I stick to an induction menu at dinner time because it is easy, satisfying and seems healthy over all.

Tonight I am having golumpkis (Polish version of stuffed cabbage with ground pork, egg and some spices) and some mashed cauliflower and a cucumber and onion salad.

Hard to believe that this food is good for me .. even after four years!

Hey Irish! Good to see you back!!!!!

The stuffed cabbage sounds yummy! I might have to made a stuffed cabbage casserole this weekend.

                                Tonight I'm having

Shrimp egg foo yung (leftover shrimp from last night, mix with eggs, bean sprouts, some onion, fry in a pan. Drizzle with toasted sesame oil and serve.)
Zucchini noodles (I got a deal on fresh zucchini at the farmer's market )
