    Tonight I had a nice, thick hamburger patty with a pepper salad.

    My pepper salad consisted of roasted bell pepper marinated in olive oil and garlic, jalapeno peppers and banana peppers

        We had pork tenderloin stuffed with spinach, onion, mushrooms, cream cheese, and a little mozzarella. (I omitted the cream cheese for my hubs.) Just butterfly the loin chops, stuff, and seal with a toothpick. I baked ours about 30 minutes @ 375.

          Taco wraps with a cup of deep fried kale on the side. I can't remember who put up the recipe for the kale, but thank you so much! I had never had kale before, and it was really really good. Nice to have when I'm craving something crunchy that's not celery
          Currently having a mock root bear float for desert...Journey, if you get the Hansen's diet it is made with Splenda rather than aspertame.

            I don't normally go OMG when making recipes because i am just not the cook type lol but this is the second time i made this and it is SOOO good, i have to stop myself from eating the rest but am making it for lunch tomorrow! For any who wish to enjoy it also:

            Parm encrusted Chicken and Arugula Salad (i substituted the arugula salad for one of all different mixed baby greens and italian greens cause none of the stores had arugula)
            ingredients
            • 1 tablespoon Dijon mustard
            • 1 tablespoon extra-virgin olive oil
            • 1/2 teaspoon chopped thyme
            • Four 6-ounce skinless, boneless chicken breast halves
            • Salt and freshly ground pepper
            • 1/2 cup freshly grated Parmesan cheese (1 1/2 ounces)
            • 4 cups packed arugula leaves
            • 1 cup cherry tomatoes, halve
            directions
            1. Preheat the oven to 475°. In a small bowl, combine 2 teaspoons of the mustard with 2 teaspoons of the olive oil and the thyme. Season the chicken breasts with salt and pepper, then brush them all over with the mustard mixture. Pat 2 tablespoons of the Parmesan all over each breast. Transfer the chicken breasts to a rimmed baking sheet. Bake the chicken on the top shelf of the oven for about 15 minutes, or until just cooked through and nicely browned.
            2. Meanwhile, in a medium bowl, combine the remaining 1 teaspoon each of mustard and olive oil; stir in 1/2 teaspoon of water. Add the arugula and tomatoes, season with salt and pepper and toss well. Spoon the salad onto plates, top with the chicken and serve.

              Tonight it was a chicken florentine casserole with cheese with faux-rice made with cauliflower and diced cucumbers and tomatoes with some ranch dressing.

                I had boneless pork ribs smother in a mixture of Kale greens, tomatoes, cucumbers, cilantro and mushooms, all seasoned with dill thyme and sage. Was freaking divine.

                      This evening we are having steaks with either mushrooms or onions. Yummy. Oh, by the way, its day 6 for me and I am down 6 pounds. What a great way to start the week. My energy is through the roof-- I have to mentally slow down or I will drive my honey crazy. Needless to say, the house is very clean and the laundry all done and this after working a 60 hour plus work week last week. On Sat. I cleaned the basement and it has not looked this good since we moved in. What a hoot this diet is!!

                          I had my pizza mixture italian mild and spicy skilleted up with tomatoes and cheese. I usually add more but today i kept hearing just order it, so i had to get it quick!! before i changed my mind lol.

                            Ive a total lack of insperation this evening...I had 3 medium sized pork chops..!then about an hour later I had some cheese...

                            I have a slight ache in the tummy though today around the liver area...
                            Infact would say i feel quite down and in need of a treat.... im sooooo tempted to go raid the fridge.... but id feel soooo guilty after....

                              NO, Bigmamma, don't do it! I know how you feel I got into a bit of an arguement with my teen ager last week & man I could have eaten a carton of ice cream.

                              Tonight was the casserole on Linda's site for green bean & hamburger casserole. Pretty good if I do say so myself. We were going to have leftover salmon BUT my super skinny 21 year old beat us to it, dang him!
