    I had a small slice of the Biker Goddess Pizza recipe with veggies and diced pepperoni and a salad of diced cukes and tomatoes with Ranch Dressing.

      2 cups of baby spinach, 1 piece of crumbled bacon, 1 diced egg, 1 oz cheese, 2 oz roast beef and turkey breast diced with oil and vinegar for dressing.

        I am boring lol i once again had what i have had every day for lunch, a 1/2 lbs cheeseburger with order of bacon, side salad including pickles and black olives with mayo as the dressing.

            While the rest of my dept is chowing down on rice bowls from the local "Island Grill", I'm nibbling on peapods, celery and grape-tomatoes and salmon-dill dip (cream cheese, salmon, dill and onion).

              Leftover chicken fajitas (just chicken, onion, green peppers, and fajita seasonings; no taco sauce today, although I had some with it for dinner last nignt) with about two cups of salad. I make lunch my main meal of the day; dinner will be smaller. The salad had dark green lettuce, about 2/3 cup of fresh broccoli, a medium stalk of celery, bean sprouts, a little cheddar cheese, and olive oil and vinnegar dressing. Water to drink, of course. That's a pretty standard lunch for me, a big sald with some leftover meat. Easy and yummy. And legal!

                  Haven't seen this in a couple of days so I thought I would bump up - today I had a salad from Jason's Deli as we had a working lunch (yuk -- I can make much better salads) yesterday though I had chili relenos and salad YUMMY

                    Chile rellenos are legal?!?!?!?! My hispanic heart just skipped a beat. Today for lunch, I'm having chicken salad with diced egg, mayonaise, mayo, dill, with celery stalks for dipping. Yummy.

                        had a nice little salad with diced tomatoes, parmesean, shredded cheddar, ham, cucumber, bananna pappers and black olives. I made sure it was only 1 cup of those veggies but I got a LOT of iceberg lettuce.

                          Hi UrbanShaman - yes isn't it WONDERFUL. I am copied Linda's recipe below (she also noted this was induction friendly)... however I added just changed it by stuffing the poblano's with beef instead of cheese and then put cheese on the top of the red sauce a few minutes before they were done just enough so the cheese would melt. Living in Texas I wasn't sure what I was gonna do about missing my Tex-Mex Fridays



                          CHEESE STUFFED POBLANO CHILES
                          6 small-medium poblano chiles, about 1 pound
                          16 ounces Muenster cheese
                          1 cup Red Enchilada Sauce

                          Roast and peel the chiles (see my note below). Place them in a greased 9x13" baking dish. Cut the cheese into 6 equal size slabs and insert them in the chiles. Spoon the enchilada sauce over each chile. Bake at 350º 20 minutes.

                          Makes 6 servings
                          Can be frozen Per Serving: 337 Calories; 25g Fat; 20g Protein; 11g Carbohydrate; 2g Dietary Fiber; 9g Net Carbs

                            That is so awesome FBG! I am all set to grocery shop tomorrow and you can bet this will be on my list. I can't wait to call my mother and tell her that not all hispanic food is anathema on this diet. Yay!
