    I have problems with it sticking. I can get it sort of crispy. I made it with fresh and frozen. You've got to drain it realy well. I ring it in a clean flour sack towel.

    It is always delicious!

      I just have to share. I've always avoided cauliflower because I really didn't care for the blandness of it. Bland food and cajuns just don't mix. I was REALLY wanting a potato for some reason. In an effort to curb this craving I decided to give the mashed cauliflower a chance. It was absolutely amazingly delicious. Woo hooooooo!!!!

      The only problem with that is it was so tempting to eat the entire bowl in one sitting. For some reason I just know that this would not be an induction friendly move. This brings me to my question. All of these recipes are nice but I haven't noticed where portion size is mentioned on most of them. For instance on the mashed cauliflower, what is the recommended portion size? Is this measured before it is processed are does someone have a prepared serving size? All I added was 1/8 C. Heavy cream, 2 ouces of cream cheese and salt as well as pepper to a large head of cauliflower florettes.

      Now I can't wait to try the cauliflower rice. We eat rice with everything down here and I tried okra gumbo today with no rice and I really miss it.

            These are great. Glad I stumbled upon them prior to going to the grocery store earlier today. We had the Make Me Stuffed peppers tonight. I tweaked it a bit by omitting the tomato (forgot to buy them) and it was fantastic.

            Someone asked a question a while back about portion sizes. That is a bit tough to determine but I sort of look at the overall ingredients and determine how it splits up and go with that if it's legal!

            I'm almost at the end of my 1st week of induction after many years away from this WOE (and many many pounds gained). I forgot how easy it could be. Thanks to you all.

            ETA: just noted my join date - that would have been back when I did this the first time around. Sigh...

              Just polished off my dinner of Make Me Stuffed Peppers (added some jalapenos for extra kick) & Mock Mashed Potatoe...They were devine! It was my first time trying a recipe from this site... The whole family loved them... Cant wait to try some more recipes.... (",)

                I looked for mock mashed potatoes and found this little gem which I am looking forward to trying.

                This is a staple of my diet (more so in winter than in summer). I always use fresh cauliflower (I like to use the bag of fresh). Boil cauliflower and about half of a onion for only about 2 minutes and then turn off and let sit in water for about 15 minutes. I then place in collander and let it sit for awhile with paper towels on top to soak up water. In separate bowl mix extra sharp cheddar, sour cream, cream cheese, salt, pepper, stir in cauliflower and mix well. Bake at 350 until bubbly and brown.

                Sounds good yes?

                    This is one I posted on the induction recipe do go and have a look you get some really fantastic ideas.

                    Defrost some chicken breast and either leave them whole or cut them into bite size pieces. I then fry them in onion, butter and garlic. When they are cooked through I add frozen spinach, tinned tomatoes, mushrooms and when they are soft add a big dollop of cream cheese. This seems to keep me satisfied and tastes very rich and creamy. It can be cooked very quickly and it kept me sane when there were chocolates and cake around at Christmas.

                    Although I love to cook there are some real experts around these parts who have been doing Atkins for a number of years and have learned the tricks of eating well but legally.

                          In the UK you can get sugar free flavoured jelly made by Hartley's you will find it with the ordinary jelly. I buy mine from Tesco who also do there own brand. I like Harley's as they do more flavours including lemon and lime which is delish if you beat it up with some cream cheese and let it set.

                            Unfortunately Hartleys and all the own brand jelly packets I have ever read the labels of are sweetened with aspartame which Dr Atkins told us to avoid

                            You can buy plain unflavoured gelatine in the cooking/baking section in most shops which you can use to make your own jelly using a 'legal sweetener.

                            Remember though that we are allowed up to 3 servings a day of sweetened food or drink.

                                I agree just as long as you don't overdo it remembering what Elizellen has pointed out about the aspertame. Enjoy it is one of the only things that I do indulge in at least once each day.
