  • Never ending induction recipes

    Hello fellow inductees!

We get a lot of requests here for what to eat...or what is for supper or breakfast so I thought I would start this thread to help make life a lot easier for us.

    Here are the rules:
Recipe has to be induction friendly!!!
Recipe has to be TNT (tried and true by you)!

Make sure it follows the rules...ie:
can't have more than 3-4 oz of cheese per serving.
No more than 3 servings of artificial sweetners
    1 oz sour cream
    3 oz heavy cream
2-3 T lemon or lime juice

    Looking forward to the sharing!!

Here is one I had that I liked!! I haen't made up a name for it....hmmm

    Elsie's Breakfast Wrap

1-2 scrambled eggs ( I use 2 as I am trying to up my calories)
    1 oz cheese, shredded
    1 T sour cream
1 T salsa (make sure it is sugar free or homemade)
Romaine lettuce leaf (or 2)(or 1 cup torn lettuce of choice)(Romaine seemed to tear less)

Scramble eggs. Spoon onto lettuce leaf. Place cheese onto so it can start melting. Add sour cream and salsa. Wrap leaf(s) around it and enjoy.

A good way to get some of your veggies in. You could also add some peppers or other veggies of your choice.

Somebody's Mock Danish...can't remember who the author is

      2 eggs...beaten
1 oz cream cheese...beaten and blended with eggs
      1-3 dashes of cinnamon
      1/2 tsp of vanilla
      1 tsp splenda

Mix everything up really good. Put it in a microwave safe container/bowl. Cook on high for about 2 minutes...give or take 10seconds.

        Cauliflower 'Hash Browns'

        1 cup of raw cauliflower
        1 egg
        seasonings to taste
1/4 ounce of butter or 1/2 tablespoon of oil

Grate or shred cauliflower into a microwaveable bowl and microwave it on high for a couple of minutes till softened.

Let cool then add one beaten egg and whatever seasonings you like - salt/pepper/chilli flakes etc

Put frying pan over medium heat and add butter or oil. When hot add spoonfuls of the cauliflower mixture in heaps to make 4 small or 2 large 'patties' and fry till firm and browned on underside, carefully turn over with spatula and cook other side.

I serve them with eggs and bacon usually but they also work well as a veg alongside any main dish!

          Re: Never ending induction recipes

Had this for breakfast today. Found it in the recipe section from MotherEarth aka Sherri. I would say that the texture/look may be something to get used to the first time for some. Next time I will save the cream for on top after it has been cooked..makes it feel more hot cereal like. But I would add an extra Tbsp of water as I think that it needs the liquid if you don't add the cream in. I added sweetner. Quite yummy.

I make hot flaxmal cereal all the time. If you have whole flax seed, just mill it in a coffee grinder.
          3 TBLS. flaxmeal
          1 Tbls. cream
          1/4 cup water
          1 tbls. butter
          Sweetner if you choose
Microwave for 1 minute and 20 seconds on high

NOTE: See Elizellen's comment below..flax is limited on induction.

Quiche - got this from somebody on board!?

            4 eggs, beaten
            1 tbsp cream
            breakfast meat (ham, sausage, bacon)
            assorted desired veggies
            2 oz shredded cheese

Put in a dish, stir it up, and bake: 15 minutes at 450 degrees, then 25 minutes at 375 degrees. Let it set for 5 minutes or so after baking.
Makes eggs not taste so much like eggs! =D

              Re: Never ending induction recipes

Just a word of caution about using flax (linseed) on induction.

Dr Atkins did suggest we could add one tablespoon of psyllium husk, wheat bran or ground flax on induction if we are getting constipated and need the extra fibre to help move things along.

So induction amounts of these should only be one or maybe 2 tablespoons worth. You might need to halve quantities of recipes using more flax/bran/psyllium (or eat only half of the recipe) to stay within the limits while on induction

Using flax in larger quantities would become 'legal' once you are at or past the seeds/nuts rung of OWL.

And do up your water to keep things going!

I just made the best meatloaf with fresh salsa and cheddar cheese, top with fresh parm. MMMMMMMMMMMMM amazing. I also make a flax cookie and top it with the cheesecake ( cream cheese, splenda and vanilla) feridgerate for 1 hour or longer and its like cheesecake with a crust!

This recipe is not mine. I think it came from a cookbook by Dana Carpender but it is all over the net. I love it. Made some today. Leftover are really good for a snack too if some cravings set in.
                    Heroin Wings

                    4 pounds chicken wings ***
                    1 cup grated Parmesan cheese

                    2 teaspoons paprika
                    1 tsp. salt
                    1/2 tsp. pepper
                    1/2 cup butter, melted

                    1. Preheat the oven to 350 degrees.

                    2. Cut the wings, into pieces saving the pointy tips for making soup
                    or broth.

                    3. Combine the Parmesan cheese and the parsley, oregano, paprika,
salt, and pepper in a bowl.

                    4. Line a shallow baking pan with foil.( if you don't do this you
will be sorry cause you will be scrubbing on this pan a week later).

                    5. Melt the butter in a shallow bowl or pan.

                    6. Dip each piece in butter, roll in the cheese and seasoning mixture,
and arranged in the foil-lined pan.

                    7. Bake for 1 hour

This is one of my favorites. I did learn that if you are making a big batch of this that you don't need to double, triple, or whatever you did, the red pepper flakes. Don't ask me how I know that...LOL!

                        Stick To Your Ribs Chili
                        From: Di Bauer
                        2 pounds ground beef
1 heaping teaspoon minced garlic (about 1 large clove, fresh)
                        1 tablespoon red pepper flakes
1 14.5-ounce can diced tomatoes with green chilies
1 15-ounce can no sugar added tomato sauce
1 8-ounce can no sugar added roasted garlic tomato sauce
1 tablespoon cayenne pepper (or to taste)
                        1 tablespoon onion powder
                        1 teaspoon paprika
                        1/8 teaspoon cinnamon
                        1/8 teaspoon nutmeg
                        sour cream (optional)
                        shredded cheddar cheese (optional)

Brown the ground beef with the garlic and red pepper flakes; drain thoroughly. Combine the browned meat/spices with all the remaining ingredients except the sour cream and shredded cheese. Place mixture in a crockpot and cook on high 3-4 hours or low 6-8 hours. Serve hot, garnished with dollops of sour cream and sprinkles of cheddar cheese, if desired.

Freezes well for a quick lunch or snack.

                          Re: Never ending induction recipes

You gotta try these. Very easy to make. Found this recipe in the stickies. But thought they belonged here as well. Me thiks I am having a tuna sandwich today!!

Atkins Revolution Rolls (substitute for sandwich buns)
                          makes 6 rolls.

                          3 large eggs (1.8 )
                          1 1/2 ounces cream cheese, softened (1.5)
                          1/2 teaspoon onion powder (0.7)*
                          1 pinch salt (0)
1/8 teaspoon cream of tartar (0.3)

Preheat oven to 300 degrees F. Line a cookie sheet with either wax paper or cooking parchment paper. If using wax paper, butter or oil it. Set aside

Separate the egg whites from the egg yolks. To the egg yolks add the cream cheese and onion powder. Mix well and set aside.

To the egg whites, add the cream of tartar and salt. Beat the egg whites until it forms very stiff peaks.

Fold the egg yolks into the egg whites. Do not overmix because the egg whites will provide the "leavening" for the rolls.

Using two tablespoons, drop the the mixture into 6 equal mounds onto your prepared cookie sheet.

Bake for 30-40 minutes in the middle rack of your oven. Cool completely. Store in the refrigerator in an air tight container.

*May replace the onion powder with 1 packet of Splenda. The carb count remains roughly the same per roll.

                          Per 1 serving( 1 roll)
                          Total carbs: 0.8 grams
                          Fiber: 0 grams
                          Net Carbs: 0.8grams
                          Cheese allowance: .25 oz

Note: The original recipe calls for 1 packet of Splenda. This is completely unnecessary. The addition of 1/2 teaspoon onion powder gives the Rolls more flavor (no onion taste) than the Splenda does. You can also add 1 tablespoon of a fiber supplement to the egg yolks if desired. Adjust your carb count if you do.

Good recipe to post here, Elsie

I have read elsewhere that you can substitute mayonnaise for the cream cheese if you don't have any in the fridge. Haven't tried it but it is supposed to work just as well.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

My favourite picnic salad is Coronation Chicken

Two cooked chicken breasts (Fried in butter is good) cut up into bite size pieces
Half red pepper cut into bite size pieces
Half green pepper cut into bite size pieces
Half yellow pepper cut into bite size piece
                              lettuce leaves chopped small
                              curry powder to taste
                              garlic powder to taste
                              onion granuels to taste
Heafty table spoon of a good mayo.

Mix everything together and then add the mayo and mix well.
