    MMMmmm..should be outlawed.

    Zucchini 'chips'

    here is what I did. Bought a deep fryer but didn't have enough oil to fill it so used a small cast iron frying pan. About 1/2 full. On medium heat. Cut Zucchini in half lengthwise. Scoop out seeds (don't know if you have to do that or not). Slice thinly. Fry until golden brown. I like mine just a little past that for more crunch. Take out when ready and put on paper towel. Add seasoning salt. Let cool. YUMMY. Even the kids ate this. Caution...use portion control.

        My deep fryer book says to use:
        Corn oil, blended Vegtable, soybean, sunflower, or grapeseed oil.

        not suitable:
        Olive, peanut and walnut oil. Lard.

        Dr Atkins says in part:
        ......vegtable oils are allowed, the best being canola, walnut, soybean, grapeseed, seasame, sunflower and safflower oils,....Do not cook poly unsaturated oils, such as corn, soybean and sunflower oil, at high temperatures or allow to brown or smoke.

          If you want grapeseed oil, which is fantastic by the way, don't buy it at the grocery. You can get a very large can at health food stores and that runs about 8 dollars around here. It is much higher at grocery stores!

          Grapeseed oil is light and flavorless.

            After Billbazz (I think) mentioned making zucchini fans I thought I'd try my hand at them
            Here is how I made them

            First slice a courgette nearly all the way through lengthways, making 4 or 5 cuts. (I always partly peel them to look prettier and as my husband doesn't like the taste of the peel). Then microwave for a few minutes till softened. Remove and fan out the pieces.



            Sprinkle some spices over it, brush with oil or melted bacon fat and put under the grill (broiler) to brown.



            Sprinkle some chopped cooked bacon or ham and put under the grill again for a minute or so to crisp up



            Then lay some cheese over it - I used gouda slices



            Put under the grill again and voila!!



            Similar to the other dish I posted about earlier but much more elegant!!

            Next time I think I will leave them under the grill longer to brown the courgettes more.

              Elizellen...thanks so much for adding pics! Makes Bill's recipe seem more doable for some reason. What a great presentation for company! Glad you posted it in the first place Bill!

                    I found this off another aktins forum! but mind you, I skipped on the pecans- I don't think that's induction friendly! welcome back cheesecake!
                    Creamy Dreamy Jello Cheesecake

                    16 ounces Cream Cheese (neufchatel cheese...it's the low fat Philly brand) (13.4)
                    1 cup heavy cream (6.7)
                    5 packets Splenda (4.5)
                    1 box jello (any flavor) (0.0)
                    1/2 cup boiling water (0.0)
                    3 ounces pecans (3.6)

                    Boil water and add jello. Stir until well incorporated and set aside in shallow dish to cool.
                    Set cream cheese out to soften or zap quickly in micro until soft.
                    Grind pecans in food processor until finely ground and somewhat mushy (one step above pecan butter). Press firmly into bottom of pie plate.
                    Whip cream until stiff peaks form and add Splenda, one packet at a time, beating continually. Remove from mixer and put into a separate container.
                    Whip cream cheese until soft and creamy. Add jello and whip until thick and smooth. Add 2/3 of the whipped cream (reserving 1/3 for top of pie) and whip with mixer until thoroughly blended.
                    Spoon onto crust and spread gently (watch out for your crust!). Top with remaining whipped cream and spread evenly.

                    Chill for 2-3 hours and enjoy!!

                    Serves: 8 (generous slices!)

                    Total carbs for entire recipe: 28.2
                    Carb per serving: 3.5

                      THat sounds great! I definitely cannot wait until I get to nuts and seeds. My cheesecake recipe calls for pecans in the crust (vs graham crackers) and on top. It's my favorite, "Turtle Cheesecake" I have been making cheesecakes with my mom for years. It's my dad's fav dessert and she makes him one for his bday every year Anyway, I love to make them and even have a professional heavy dute cheesecake pan that is now collecting dust. I just can't bring myself to do it without the crust

                      I may have to try this "substitute" to hold myself over!

                        ok, well this is a very basic recipe, but one i kinda developed as i was cooking tonight.

                        i had bought some chicken breast the other day and decided that was what we were having for dinner, but really wasn't sure what all i was gonna fix to go with them, well here's what i ended up with.


                        3 fresh chicken breast
                        garlic powder-to taste
                        lemon pepper-to taste
                        3 T olive oil

                        tomato(whole)
                        1/2 cup green pepper(diced)
                        1/2 cup onion(chopped)

                        heat olive oil in skillet(high heat), begin cooking breasts slightly. turn chicken spinkle spices on chicken. slightly cook other side, turn spinkle spices on second side. reduce heat to med high, continue cooking.(turn as needed)

                        when chicken is almost done, add veggies and cook them down to desired tenderness.(stirring veggies as needed) then turn heat down to low and cover with foil or lid. continue to cook chicken and veggies until done.

                        remove chicken from the skillet, and top with veggies

                        it was really good, especially just coming up with it on the fly like i did. definately different and hubby really liked it. i also added a little extra garlic powder to the veggies when i added them. i probably added veggies a little to soon, as they broke down a little to much by the time the chicken was fully cooked.

                          You might try chicken breast, with sauteed mushrooms, onions and bell pepper on top and then top that with montery jack cheese. It is a very tasty one too.

                            flax works well as a binder for salmon patties or 'croquettes' (balls.)

                            And salmon is good for you.

                            Hubby loves salmon patties and he did not notice anything different, I just used 1/4 cup flax meal (8 patties) instead of my usual flour/cornmeal mix.

                              Anyone got any lactose-free treats??

                              Hello!

                              I have an allergy to milk products, basically ruling out cream and cheese which is annoying as I do actually like to eat them!

                              Can anyone post up a nice sweet treat which feels like an indulgent treat but cuts out the cream and cheese??

                                Belle...try the recipe request forum. You should have better luck there. Make sure to mention that you are in induction and remember that you are limited to 3 artificial sweetners a day.
