I hate veggies. Can I do this without them?

    I agree with everyone.....try the veggies. Try cooking in a little butter and salt a pepper. Also, try different types of lettuce...spinach is good in a salad too! Cook some in an omlette.You can do it, just experiment a little.

        They're not only Atkins friendly, they're Atkins induction friendly.

        Much of what I do is for those lower in the Atkins rungs.

            Atkins friendly and very tasty. The problem with them is portion control. Induction friendly doesn't mean eat all you want. The recipes I've gotten from Cleo are "make you lose control" good. While this makes it easy to eat a variety of good foods and stay on this WOE, you still have limits.

              if you like pizza then you like tomatoes which are an atkins 1 cup veggie and kraut is induction legal as it is cabbage as the base. Any other veggies you actually like? mushrooms or onions on your pizza? how about mexican food with the hot peppers? the peppers are induction legal.

              You should see Cleo's blog full of recipes and pics of those foods. don't go if you are hungry though cause it is very droolworthy

                The recipes are all along the right side of the blog in categories. If you click my siggy line, you can scroll along the right to find them. I'm looking for an easier way to organize the recipes at this point, but haven't broken down and purchased a dedicated web site.

                tfek-- I have portion control issues, too! So what I do is to make, say, the lasagna, and immediately wrap up most of it and freeze it! I make small helpings, smaller portions, and put in the freezer what I can't use right away. A pizza for me won't always be a full-sized one (tempting), but maybe six smaller personal-sized ones! It keeps from feeling like I have to have just one more slice--even if I'm not hungry!

                2big-- I love saurkraut! I even use it to make taco meat. It's kind of like shredded beef when it's cooked down.

                  hey Goingtodoitright do you like pumpkin? it is an induction one cup a day veggie and you can make a mock pumpkin pie out of it. I love it as soup too and mixing one can with one block of softened cream cheese and some pie spice makes killer pumpkin butter.

                        cauliflower only smells if it is overcooked: lightly steaming it won't result in a strong odor. Or you can do this trick: add a bay leaf to the cooking liquid to flavor the cauli and avoid the smell.

                        But try the veggies in different preparations. IF you like potato salad---try faux-potato salad made from cauliflower. If you like coleslaw (cabbage is allowed during Atkins)---follow a standard coleslaw recipe but omit the sugar/honey/etc.

                        Good health is dependent on good nutrition.

                              OK, look. Does cauliflower, broccoli, cabbage, brussel sprouts, and asparagus stink when you cook them? Yes. But it's just something you need to learn to put up with. They definitely taste better than they smell.
                              To me, only asparagus smells bad while cooking, taste great though.

                              Eggs, on the other hand, if if even smell them being cooked, I loose my appetite.

                                Well, Mitzi has done a wonderful job in this thread!! I do feel obligated to chime in though!

                                I cannot imagine a WOE that includes eggs, chicken, cheddar cheese and the occasional salad! My old veggie favorites were potatoes and starchy veggies so this WOE had to introduce me to new possibilities if was going to lose the weight. I clung to and embraced keeping my carbs thinking I would lose weight faster. Nope. It doesn't happen that way. I always ate veggies from the beginning but my carb count was still pretty low.

                                I have become a huge fan of pumpkin and spaghetti squash. They're also a little carby and that helps get your carb count where it should be. You need to try Mitzi's MUP. Seriously, it's awesome! It is a sweet treat and I think you'll find yourself very surprised when you taste it. It's delicious, filling and just tastes darn good! I actually have a hard time limiting my spaghetti squash. I use it as a replacement for pasta. I never knew about this veggie until this WOE and Here's what I do.

                                Stab the squash with multiple holes to avoid it exploding in the microwave. Nuke it until it's tender enough for a butter knife to easily pierce it.

                                I cook this from Linda's site and add either shrimp or chicken as the protein source. I LOVE it. It's fatty and filling and it's delicious! There are possibilities for this WOL even if you don't see all of them right now as a veggie hater! Keep asking questions, gather information. You're going to find something you love and you'll realize the possibilities truly are endless!

                                CREAMY ALFREDO SAUCE
                                8 ounces cream cheese, softened
                                3/4 cup heavy cream
                                2 ounces freshly grated parmesan cheese, 1/2 cup
                                1/4 teaspoon pepper
                                Pinch nutmeg
                                1/2 teaspoon garlic powder
                                Salt, to taste
                                Pinch fresh parsley, minced, optional

                                In a medium saucepan or nonstick skillet, heat the cream cheese on medium-low heat, stirring until melted and smooth. Gradually blend in the cream until smooth. Stir in the parmesan and seasonings. Cook and stir over low heat until smooth and creamy, thinning with water until thick but pourable. Serve over chicken, vegetables or other dishes.
                                Makes about 6 servings
                                Do not freeze

                                Per Serving: 279 Calories; 27g Fat; 7g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
