    >>I didn't think pumpkin was allowed during induction?>>

    It's on the food list.

Another one-cup vegetable/fruit that often gets overlooked is rhubarb which makes for a nice dessert if stewed with some sweetener and topped with whipped cream
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

I must have totally overlooked the pumpkin! I've looked at the list so many times, not sure how I could have missed it.

Rhubarb is just coming up here, that will be a nice treat when I'm able to pick it!

I recall loving rhubarb pie as a kid, but we had it growing in our garden back then. I don't know that I've ever seen the stuff at the local grocery store, but I'll have to take another look...

I see it here in the grocery stores but usually not until late summer. It's really easy to grow!

It is extremely easy to grow. I have one patch that I don't like it's location so I have mowed it off several times and it just keeps coming back. I need to dig it up this year. Last year I bought a variety that is suppose to be sweeter and great for baking and freezing. It is coming up very well this year! Can't wait to try it!

Slow and steady wins the race!!!
