    I took the pecan stuffing from this recipe:
    Pecan-Stuffed Mushrooms Recipe at Epicurious.com
    Added some dried cherries (ones that I did myself in my food dehydrator) to the pecan stuffing and stuffed it into two pork chops. That's cooking right now. I can't decide whether or not to deglaze the pan with brandy or marsala fo I can have a sauce with the chops....Anyhow, I'm having a baked sweet potato on the side along with some green beans.

      I ate out with some friends tonight. I had a salad that was Induction-legal; I asked for olive oil and vinegar instead of the regular dressing they had for it. Dessert was strawberries. I didn't eat the cream they came with, because it was likely sweetened, but instead I ate them with some cheese cubes (I had the cheese with me, just in case ).

        Today was a travel day for me so it was pretty much Induction stuff so far. I picked up some nice fresh caught cod for dinner. Not sure how I'm going to cook it. Might just be baked with lemon butter, hot paprika and a little grated Parm on top. Veggie will be creamed spinach (my easy-peasy version of baby spinach, creme fraiche, and a little bit of garlic powder).

        I am seriously considering the move to the bean rung in the future. I was going to skip the wine rung as I really don't drink anymore (except maybe a glass of cranberry wine at Thanksgiving or blueberry wine at Christmas...oh yeah, and the glass of wine on New Years) Hmmm. But then I was thinking it would be nice to be able to use wine in those recipes instead of broth or vinegar or something. Hmmmmm.....I guess I had better not skip the wine rung. Lentils will have to wait a bit longer. Should be able to move there this winter though. That would be good.

          You can switch beans and alcohol rung if you wanted. I am thinking of making some hummus today.

            It's funny...I really miss beans. Thought I would miss bread things but no, I miss legumes. I have a lot of bean spread recipes that I miss. The bean rung is the beginning of trouble for me. When I was on SBD we had to have 1/3-1/2 cup of beans daily. Very healthy but that is maintenance level for me. So I'm thinking when I try the bean rung, it will have to be a much smaller portion.

              It has to be smaller. 5 carbs of beans is hardly any beans. So they are good as an addition to salad sometimes or in a lightly beaned chili.

                I'm having a beef stroganoff with mashed kabocha squash (it's a japanese pumpkin.) I found some apples on the "mark down shelf" at the market the other day. They weren't badly bruised at all (why they were on the mark down, I don't know.) Anyhow, I made apple sauce with them. So I'll have a bit of that mixed with whipped cream.

                  My dinner was chilled cucumber mint soup and baked salmon with a crust made of chopped olives, minced pine nuts, and fresh rosemary and sage. I had roasted kohlrabi with the fish.

                    I realised again the benefits of having worked through OWL tonight when I found it was nearly time to leave for the gym and there was no time to eat a meal before going, though it was near the 6 hours since I ate last.

                    So being able to pick up an ounce of brazil nuts from my stash of small prepacked pots on my way out made an easy grab'n'go snack to see me through Pilates and Body Conditioning without feeling weak and wobbly.

                      Had a fantastic salad of radicchio, diced pear, chopped walnuts, diced parmesan with EVOO and balsamic vinegar.

                        I heated heavy cream in a sauce pan and then I threw in capers, lemon juice, tarragon and parsley. Poured the sauce over a grilled chicken leg and had this for dinner with a side of stewed leek.

                          Had celery with hummus for breakfast. Lunch was chilled cucumber mint soup and a boiled egg.

                          For dinner I made this: Baked Whitefish On Celery Leaves Recipe by Kety Vences | ifood.tv. I have some left for tomorrow as well.

                            For lunch I'm having devilled eggs and a leftover from last night: a chopped vegetable salad (tomatoes, cucumbers, sweet peppers, etc. ) mixed with quinoa and a vinaigrette. And I packed a snack of cottage cheese and apple sauce.

                            Supper will be super easy poached shrimp (water + 1 sliced carrot + 1 sliced celery stalk + 1 sliced onion + fresh parsley + a dash of cayenne, bring to boil and simmer for 10 minutes, then add the shrimp and cook until the shrimp is done. the broth is delicious as a light vegetable soup) and broccoli.

                              I did a boiled eggs with roe for pre exercise breakfast and then cottage cheese (I add a tad of cream) with roasted almonds and strawberries after and a small quarter of an apple. I almost forgot

                                You all are so good about putting your menus together and you are wonderful cooks. My menus are boring! lol Due to pure laziness on my part I guess.

                                I have no idea what is for dinner today..probably chicken a la George.
