    I made this fresh mozzarella roll.



    and filled it with prosciutto, pesto, chopped roasted pine nuts (pignolis) and roasted red pepper. Very tasty and impressive looking. This would be great to bring to a party or other function too.

    The fresh mozzarella unwrap and roll cheese is by Bel Gioioso. As you can see the filling options are endless.

          Breakfast was flax bread with eggplant salad, and a salad with feta cheese, tomatoes, fresh basil and mint, lemon juice and olive oil.

          Lunch was cod wrapped in pancetta, with pesto. And tomatoes, leeks, mushrooms and garlic sauteed in butter, to which I then added dry white wine and a little more butter; then cooked to reduce the liquid.

            I had a bunless burger with potato chips.
            Not the healthiest of meals but I though I would test myself with potato chips. Yes looks like I can eat them fine. They are carby so we are just talking about a few chips.

              Bresaola (cured beef sliced thin) with arugula and parmesan shards, olive oil and lemon juice.
              Chopped zucchini and a bit of chopped onion cooked in olive oil.
              A coconut flour/mixed nut biscuit (made with splenda and saccharin).

                I had roast chicken for supper with mushy green peas. Mushy green peas are just so funny. Remind me of my childhood. Made gravy using guar gum. I know I can use flour but green pea carbs added up. I like using guar gum for gravy. Just have to do a tad at the time. Oh and cauliflower to go with it all. It was good.

                    Shrimp scampi...I finally got to use some wine! This is the first time I've had it without pasta or bread to sop up that nice garlic butter. I survived. Didn't really know what to have with it so I had asparagus. I used to make a bowtie/scampi/asparagus dish so I thought I'd aim for that sans bowties. It was tasty.

                    p.s. I bought some Luna Di Luna wines in those little 4-packs. They're perfect for cooking without a ton of wine left over.

                      Pomodori al riso (rice stuffed tomatoes)... the "rice" was a soy product... I used more tomatoes than rice, but it was nice. Radicchio (shredded) salad with a quarter of a diced pear, chopped walnuts, parmesan cheese, EVOO and balsamic vinegar.

                          I thought about mashed cauliflower but didn't have any cauliflower. It is my default "sopper."

                          Breakfast & lunch were basic but dinner was very tasty. Made Beefy Mushroom soup (with pumpkin) only I used stew beef instead of the ground beef. Made some other tweaks too:
                          • Stew beef instead of the ground beef
                          • 4 c water instead of the canned broths (stew beef makes its own tasty broth)
                          • 8 oz mushrooms because that's all I had
                          • added chopped celery to make up for the missing mushrooms
                          • 1 TBS of beef Better Than Bullion instead of bullion granules
                          • didn't need salt

                          It was fabulous...what a tasty broth! I did use canned pumpkin for this. I simmered the stew beef, water, bullion & veggies for ~1 1/2 hours, then added in the mushrooms, pumpkin and wine and simmered for about another 1/2 hour.

                          Will definitely make this again. Might try it with the original ground beef for a quick soup but I'm wondering if the great flavor was because of the stew beef and long simmer.

                            Well, yesterday I took a trip into DC for the Green Festival. I sampled some flax crackers (basically they were whole golden flax seeds, probably soaked until they were gummy, and dehydrated. they also had different "flavors"--onion, chili, etc.), some gluten free pretzels, really weird chocolate (coconut-curry flavored, etc.) and had really bad vegetarian food for part of my lunch. It was the first time I've ever had a mixture of cucumbers, tomatoes and onions that didn't taste anything like cucumbers, tomatoes and onions! And the falafel was just as bland and flavorless. Thank goodness I brought along two hard boiled eggs. I also bought a really neat bamboo eating utensil set: a bamboo knife, fork and spoon in a carrying case---great for all those other Fall and Spring Festivals I attend yearly.

                            Anyhow, this afternoon I'm going to a birthday party. On menu will be roasted pork assorted veggies and assorted desserts. I'm bringing along a bottle of Pinot Grigio and a mixed veggie salad.

                              Today I made chili. My in-laws brought tomatoes and peppers from their garden and they need to be consumed. I like chilis made from real tomatoes - less acidic. I added some kidney beans but not too many - it is one of those lightly beaned chilies again. Oh I added some of my turkey bonebroth to it. Yummy stuff. Hopefully I will get all those minerals in me.
                              Also had some bread that I baked earlier. I love how well the bread machine can deal with gluten. (I use one cup of gluten and one and half cup other "flours" (soy, oat, brans, seeds) So I am all carbed out today. But it was all yummy

                                I can't wait to use my bread machine again. Well, I still bake loaves for Mr. Ski weekly but I can't wait to bake stuff that *I* can eat!!

                                I've only used small amounts of vital wheat gluten in the past (pre-Atkins) when recipes needed a little boost so I'm curious to taste bread made with a lot of it. I don't use soy flour at all so it looks like the VWG and other flours/seeds/grain will be how I can do a lower carb bread. Some day.
