    Don... that canadian bacon sounds so good. Bacon is one thing I really miss here. Can't get good "bacon and eggs" bacon at all. Have to make do with thick cut pancetta, but it's not the same and usually too salty.

    Sham... I had fried eggs too, for supper yesterday, but not with mayo... with ham. Then had that pointed green cauliflower with olive oil and lemon juice.

    I agree... fried eggs... simple but delicious! (Only trouble is, one eats them so darn fast!! )

      It's Christmas Eve and I go to Mom's for supper tonight. We usually have a seafood stew as a main dish. I'm bringing a veggie side dish: at this point it's a celery slaw, but if I can get to a supermarket (ie: find parking at a supermarket), it might be something else. lol

        It's been a while since I've posted here.

        Anyhow, over the weekend, we had a blizzard. So I was experimenting with food. I made a chickpeas flavored with cinnamon, cumin, coriander and ginger. It was rather tasty!

          Oh Megs...I adore chickpeas... pity they're so carby one can't eat too many. Sounds like an interesting combination of pulse and spices.

          Had salt cod for lunch today... done with tomato sauce and onions. Was good.

            Yesterday's dinner and today's lunch was Chicken Korma. Just sort of winged it this time so no actual counts. I took the chicken breast leftover from the previous day's roast chicken (both sides of the breast) chopped up, 1 16 oz. bag of cauliflower cooked in a zip n steam bag and chopped up.

            Saute some chopped celery, minced garlic and onion in ghee, butter or coconut oil. Stir in 2 cups of Greek yogurt, curry powder, garam masala and turmeric to taste. Mix in cut up chicken breast and cauliflower. Add a little heavy cream or coconut milk to make desired consistency. Stir in some slivered almonds (I didn't have any so I used pignolis/pine nuts), simmer until bubbly and serve.

            I mixed in a TBS of golden raisins in Mr. Ski's portion.

              Sally, the chickpea thing was nice little "condiment" for my rather plain chicken. It made an interesting spread/dip: I mashed it and mixed in some sour cream.

              Anyhow, it started snowing here last night. So there's an additional 6 inches to the 20 inches we got over the weekend, and it's still snowing!

              I have a roast cooking in the crockpot (just in case I lose electricity, I will STILL have something to eat that isn't in cans or jars for a couple of days at least.)

                  That was my plan too. Not worried about the snow but it's a heavy wet snow and we're supposed to get 60+ mph winds later so I spent the morning cooking.

                  Reheated the soup I made yesterday and had some for lunch with a coconut flour cheese biscuit. OMG, it was great. Also made up a bunch of chicken drumettes (they're always good cold). Plan to make some buffalo style for dinner with celery and Marie's blue cheese dressing.

                  Whipped up my first batch of Cream Cheese Clouds. Very tasty. Love the fact that they can be frozen too.

                    I've really been missing one of my old pre-Atkins favorites, tomato soup and grilled cheese. So I made some creamy tomato soup and frying cheese. I finally found the frying cheese at Trader Joe's. Cut it up into small squares, fried it in a bit of olive oil, turning it so it browned on all sides. OMG, this stuff is delish!! After popping one in my mouth to try it, I put the others in the soup. They stayed whole like small chunks of grilled cheese sandwiches...tasted very similar too.

                    p.s. The frying cheese is really amazing. It gets a nice crust on the outside and the inside is nice and melty.

                    p.p.s. You need to use frying cheese for this; regular cheeses just melts into a pile of goo.

                        My family has a spinach kick these days.
                        Everything has to have spinach salad with it. So today it was pork chops with spinach salad (spinach, strawberries, blue cheese and roasted almonds). My family use a raspberry dressing from the store. I mix my own red wine and olive oil vinear to avoid the sugar.

                              Artichokes are on sale this week! So I'm having an artichoke with mayo and a few snow crab legs.

                              Re: frying cheese......that stuff is great! It makes a nice piece of "bread" for Eggs Benedict or an open face sandwich.

                                It was awesome!!! I was very happy with how it turned out, and the hubby (who's kinda on Atkins by default, he eats what I cook lol) liked it so much he ate 2 servings! At least it is low carb for him instead of eating 2 servings of regular lasagna lol. I paired it with a nice Caesar salad, and it was delish! I love Linda's recipes they are awesome!
