    i made this concoction w/ pumpkin and egg that usually has cream cheese in it. It wasn't as good. But the flan sounds pretty good.
    Im thinking of doing a lasagne type dish, with a layer of spinach, tomatoes, ricotta, ground beef, mozz...hopefully that comes out better. It's not really my favorite sweet treat. I prefer cream cheese by a mile. Just want to eliminate it as something that gives me 'issues'.

    I am still 126. Have not lost a pound...this is week 2.

      how are your inches doing?


      if you add some italian herbs to the ricotta while you fix the noodles the cheese will taste much better in the lasagna

        Terrible! Up another two pounds. Have not checked inches. I think I am being way too cavalier with cheese (office ordered pizza yesterday, had 4 slices w/out the bread- a definite overdo). As of tomorrow I am going to cut all dairy for the week and slowly introduce it to see what is causing the gain. I have always suspected I am slightly lactose intolerant so i need to try to see what is stalling me...i hope it's just the fact that I am eating way too much cheese...@ least for these past few days.
        So annoying.

            Gah. FML....

            You're so right. Back to clean eating TODAY.

            New plan: 3-4oz of dairy A DAY. I am still on Rung 2, so I will introduce new dairy and stay at the 30g carbs a day, but new dairy will not be in addition to the cheese/cream I have, but as a replacement for the day to make sure it doesn't cause stalls or issues. I have just never been able to handle that much dairy.....I'm so bloated...i look pregnant. I feel like a swallowed a lead ballon.

              In one of the old Atkins cookbooks, there is a recipe for gnocchi using ricotta. I tried making it the way the recipe stated but the gnocchi fell apart in the boiling water (now THAT sucked! ). So the next time I poured the mix into a baking dish, baked it off, cut it into squares and I had gnocchi! Basically you mix the drained ricotta with eggs, salt, pepper, herbs/spices. Pour into a buttered dish and bake at 350 degrees F until it is set. Cool, cut into cubes/rectangles. Remove and add to a sauce (I like a sage-butter sauce, but it's also good with a tomato sauce and when you get to Rung 3, a sage-butter-walnut sauce is good too!).

                  I think if you boiled the ricotta gnocchi as the recipe indicated, you need to add flour to the ricotta to help it stick together better (and that would be okay for the Grains Rung!0 I saw a spinach and ricotta gnocchi recipe on Lidia's Italy cooking show and she added flour to the recipe. This link has a spinach and ricotta gnocchi recipe that doesn't mix the flour in, but uses flour to help form the gnocchi. SPINACH AND RICOTTA GNOCCHI II - Gnocchi di spinaci e ricotta It might work if you use more parmesan cheese as your flour.

                      Oh my goodness, thanks!

                      Yes, i measured today and the inches are still the same.....so I guess i haven't gained any FAT...just some annoying water poundage. grr!!!

                        if you are feeling bloated then you could have an intolerance to the new fresh cheese. remove it from your eating for a week and see if you get better or you could use one of those enzymes for lactose and see if you get better. if so then you know it is a lactose intolerance. the aged hard cheeses should have very little lactose in them.

                          I didn't lose anything for a week and a half then this morning I was down 1.5 lbs. 5 lbs in six weeks--- meh.
                          I'm bummed at the rate of loss. I'd hoped to be at goal by June because we're going to the beach. Instead I'm probably going to have to get a tummy control suit--- never had to resort to that before.

                          Anyway, you are not alone. We'll get there eventually.

                            Still no weight loss. Am actually going through a weight GAIN. Am up to 128!

                            Nothing has changed. Inches the same. Very bummed. Office manager brought all the girls Wendy's shakes and I gave mine to the accounting guy. And I think, why bother? I can be 128lbs just eating SAD and being a little careful about calories. What's the point? I am very down about this. For this past week I have been PERFECT. I even bought a g-damn blood sugar monitor to see if my one a day Diet Snapple did anything to spike my blood sugar (it didn't).

                            I get most of my carbs from veggies, I limit SF syrups and sweeteners to about 2 a day, I don't overdo it with cheese anymore and I only eat LC desserts on the weekend. What the ****? I don't even have things like shakes or mock danishes or flax muffins more than say once or twice a week.

                            The only thing I can see is that I am actually gaining some muscles. My strength has drastically improved. However, I have not dropped inches since my stall. It is the same as since when I posted. Up 2 pounds and inches the same. This is a stall. LAME.

                                First of congrats on resisting using food as your drug of choice to sedate your anger about your scale numbers.

                                AND hey actually it isn't a stall nor a body fat gain.

                                think about it if you are up 2 pounds and your inches are the same then you shed some body fat as you have added some lean body mass. Follow along

                                Close your eyes and imagine 2 boxes of butter added to your body. See how many inches bigger it would be?

                                since you didn't add those inches you had to shed body fat while you added 2 pounds total body weight. How many pounds of body fat you have shed I couldn't tell you but you know it is at least 2 pounds worth.
