i made this concoction w/ pumpkin and egg that usually has cream cheese in it. It wasn't as good. But the flan sounds pretty good.
Im thinking of doing a lasagne type dish, with a layer of spinach, tomatoes, ricotta, ground beef, mozz...hopefully that comes out better. It's not really my favorite sweet treat. I prefer cream cheese by a mile. Just want to eliminate it as something that gives me 'issues'.
I am still 126. Have not lost a pound...this is week 2.

). So the next time I poured the mix into a baking dish, baked it off, cut it into squares and I had gnocchi!
Basically you mix the drained ricotta with eggs, salt, pepper, herbs/spices. Pour into a buttered dish and bake at 350 degrees F until it is set. Cool, cut into cubes/rectangles. Remove and add to a sauce (I like a sage-butter sauce, but it's also good with a tomato sauce and when you get to Rung 3, a sage-butter-walnut sauce is good too!).
