I also do not count the carbs in spices. I try to use a reasonable amount and really love the extra flavor but I don't actually track the spices unless making a recipe or something then I include the spice carbs in the total.

Maybe this is not right, or maybe not right for everyone but for me it works

Egads, that pork rind cake recipe is still on the Net??? I remember seeing it at another low carb forum, but that version didn't have cinnamon extract in it. It also pre-dated the pourable Splenda, so the Splenda cup measurement indicates this recipe is a revised version.

But anyway, that recipe or the recipe on this board for the cinnamon cookie that uses 2 tablespoons of cinnamon is an example of where you absolutely have to count the spice carbs.

But as I wrote earlier....it depends on how you use your spices. Are you infusing the flavor into a sauce, then straining the herbs out? Are you coating your chicken fillet with a herb breading? Are you tossing a green salad of equal amounts of basil leaves, parsley leaves, and spinach? Are you sprinkling a pinch of dried oregano on 6 pork chops?

                Page 377 in the book:

To substitute dried herbs for fresh, the general rule is that one Tablespoon fresh equals one teaspoon dried. Most spices contain less thatn 1 gram of carbohydrate per teaspoon; herbs, less than 1 gram per 2 tablespoons. Make sure spice blends contain no sugar.

In reality, according to the book. Everything that goes into our mouth is counted, no matter how small. Because it makes things taste better, doesn't negate it. Same goes for condiments and sweetners.

Personally, I have never thought to count spices, though.
