  • How To Cook A Good Steak?

i'm in search of any recipes where i can cook a "good steak" for my husband who is on the extended induction phase of atkins. i've been cooking him some meats that he is not fond of, and is starting to refuse to try new things out. he says all he wants is a "juicy steak" i'm not a "cook" so i don't have the greatest idea of how to satisfy his taste buds. i guess any recommnedations on the type of meat/cut, plus seasoning would be great help. TIA

You might want to post this in the Food Cooking Chat forum of the board, because many folks who check that forum regularly don't check out the other ones.

For me, it starts with buying a good piece of meat, high quality, and ultra fresh. I find that around here, the big chain grocery stores is not the way to go. I found a little italian market that has the freshest meat, so when we're in the mood for steak, we'll get a couple of ribeyes from there. If the meat is high quality and fresh, it only needs a little salt and pepper. Just throw it on the grill until done.

No amount of seasoning makes a bad piece of meat taste good.

Grilling is the key! Don't fry or bake steaks! I don't usually marinate steak, but I know some people will marinate it in wine, or italian dressing. I use montreal steak seasoning and crazy mixed-up salt. Make sure to buy good quality meat--depending on how fat or lean you like it, some good steaks are t-bone, new york strip, sirloin, or if you're really fancy, tenderloin (filet mignon).

          That is oh so true!

I don't skimp when it comes to good steaks. I go to a meat market and pay a little more for the best. Around here, that's Land and Sea Market .. OH MY GOODNESS .. their filets are absolutely out of this world!

I am not a big steak eater, just 3 or 4 bites satisfies me. Which steak would you all buy for that melt in your mouth steak? What should you expect to pay for a good steak? Does anyone buy their steaks from Sam's? I have heard they are good but have not gone there yet since I don't know what to look for.

Re: How To Cook A Good Steak?

Personally, ribeye's are my favorite. I'm not really that interested in the other cuts of beef. I've not had good experiences with meat or seafood at Sam's, but every store might be different. I had friends over for dinner and was going to do grilled salmon and chicken, and all of the salmon I bought at Sam's smelled rotten and had to be thrown away. I had purchased enough salmon to feed 10. Guess how angry I was.

Ribeye is my favorite melt in you mouth steak. I too use the Montreal Steak seasoning it is wonderful. Grill or broil either one but grilling is always best to me. The key is never over cook it. Nothing ruins a good steak worse than overcooking it. I like mine just a tad bit rare in the middle but not bloody.

Filets are my favorite. They also go by the name of "tenderloin".

melt in your mouth? gotta go with filet mignon--but it's expensive.

Luckily for me, this stuff is pretty cheap out here. My boyfriend and I buy our meat from a local meat company who butchers the meat on site...yum...Montana cattle.

Why am I drooling all of a sudden....

If you must cook a steak inside, instead of grilling, sear the meat on both sides in a hot skillet, add butter & seasoning, and optionally some onions and peppers beside it, and lower the temp for about 5 min turning once more. A dash of smoke flavoring is a nice touch too.

Another option is to season the meat, poke all over with a fork, top with butter then broil on a oven pan, near the top burner. Watch so you don't over do it! Turn once.

rib eye steaks are sooooooo good. i always look foward to wednesday nights in Iraq because it's surf and turf night and they always serve ribeye. unfortunately it is well done but the meat is soo flavorful and tender that you can cut into it with a plastic fork. i'm going to have me a "real" steak when i get back.

i'll be going to the store soon to get some ribeye steak, montreal seasoning and hope that i don't overcook it. my husband HATES when meat is overcooked. about how long do you think i should cook (per side) the meat to get medium rare/well? not sure which one it is? also, what do you recommend for indoor grilling? i need to purchase something to help me out with this too. TIA
