    Well I'm a sirloin guy. I think it has the best flavor, but sometimes it can get a little chewey if not good meat.

    And you might check that Montreal Steak seasoning. I got something like that that had trans-fat in it.

      Shoot, I'm the woman of the house--my boyfriend is the grillmaster. I don't know how long for each side--all I know is when 5 min. are left, I start the vegetables...

      I think like...5 min a side if you like it med/rare? Depends on how thick the steak is.

      Oooh flank steak is REALLY good too--typically marinated in teriyaki, but that's quite sugary...I've done it in red wine, garlic, and onions before and it was really good.

        Have you guys ever gone to the butcher and bought a prime rib roast? It's expensive, but it is sooooo good and very easy to bake, then slice at the thickness you desire. We did that last Easter.

        Also a really good seasoning is Greek seasoning.

          One thing to assist in getting a good sear, which is the most important thing besides starting with a good cut of meat, is brush both the grilling surface and the steak with a light coat of oil, like non-virgin olive oil.

          As for a prime roast, I make a ribeye roast which is similar without the bone-in (which is normally called a standing rib roast as well). I love a good prime rib, but I absolutely must finish off on a grill.

            Oh, I agree with all the others. You start with a good steak, (If you don't know, ask the butcher to help you choose. Then if you want to grill, get it good and hot, broiling works also, get it good and hot and in a pinch, toss it into a hot pan, that will also help. I am a salt/pepper and garlic powder person myself, light on the salt, heavy on the pepper.
            The secret is to pull it off when its done, and still juicy. A instant meat thermometer helps. I like my steak to still be moo'ing, but most folks like theirs medium.
            Good steak, big salad equals a perfect meal.

              One other thing too is when you take it off the heat source....DO NOT cut into it right away. Let it sit for a few minutes. The juices are all boiling in there....they are moving really fast because they are so hot. If you cut into the meat at that point, the juices will just fly right out of the meat onto the plate...and then you've got a dry piece of meat in a pool of juice.

              If you let it cool for a bit before you cut it, the juices will slow down and stay in the meat when you cut...and the meat will be juicy.

                Another option besides marinating or seasoning is to dry age the steak. I use either filet or thick strip steak that is well marbled. Unwrap it, place in glass dish and put it in the back of your refrigerator uncovered. Leave it in the frig for 3 days, using tongs to turn it over once per day. Let the steak come to almost room temp before grilling. What happens is the water in the steak evaporates, the flavor intensifies and becomes buttery, and the steak is very tender. This is a technique the fancy expensive restaurants use. Of course, your mileage may vary...

                      wow, the "dry age" technique sounds like a good way to prepare steak. thank you all for all of the good pointers. i can't wait till i cook a good steak!

                        I'd be afraid my meat would turn bad on me if I left it in the frig for 3 days before cooking it.

                          Atkid, it is safe if you put it in the back of the frig (the coldest part of the frig). The fanciest fancy-schmancy restaurants dry age for about three weeks, but then they have walk-in coolers that are strictly temp controlled. At home, it is safe for up to a week, but I have found that the flavor/texture does not really improve much beyond three days. Besides, I can't look at a steak for more than three days before eating it.

                            Luckily for me, this stuff is pretty cheap out here. My boyfriend and I buy our meat from a local meat company who butchers the meat on site...yum...Montana cattle.
                            OMG, I thought Texas was a steak capital of the world until I went to Billings last month. I went to a local and popular steak house and ordered a steak and I swear they brought me a half a cow. It was the bestest, tenderous, hughest piece of meat that I have ever eaten. I have to nominate Montana for being an Atkins Friendly State. LOL

                              I agree. When I said "fresh" I meant, not the crap they sell at Publix that smells bad and tastes worse.

                                Montana is very atkins-friendly as far as beef is concerned! However, the produce is awful. Small, overpriced, and NO SELECTION! I miss the midwest, where the apples are as big as your head, and cheap too. Not that I can eat apples...but you know what I'm saying.

                                Hey I'm definitely going to try that dry aging...reading all these steak tips make me want a big ole steak right now...It's good to be a carnivore.
