    Good Job !! the last two dinners i went to.. they served Italian .. grrr i was screwed and ruined my diet .. so im not going to anymore until i know i can eat whatever .. for now ill just be the one cooking for our friends

      I had baked salmon with onion gravy and steamed green beans from my garden.

        I had stuffed peppers, salad and green beans. Everyone else had mashed potatoes and alfredo noddles also but I was fine with the salad in place of those. I love making extras for lunches or dinners the next couple days. Thats what I'll be having for a few days.

          Today i'm cooking a turkey, fresh green beans from the garden with bacon, onion and fresh garlic. Cooked down some blackberries for a sundae(no sweetners) for dessert.

            The other night I made chicken breasts, and when they were done I threw in a bag of baby spinach and let it steam until it was bright green and *just* starting to wilt. Sprinkled with fresh parmesan. Simple and good.

            Leftovers didn't keep so well (slimy spinach, lol) so I threw the whole mess in the blender with about a cup of low sodium broth and beat it to a pulp. Loosened it up with some more broth, and heated through with 1/4 cup of cream and another sprinkle of cheese. Had cream of chicken/spinach soup for lunch.

              Have gotten addicted to this thread ... great ideas!

              We had a romaine/beef/tomato salad w/Greek dressing ... my husband's had a big ol' mound of potato salad in his, but I had a sprinkling of feta and it was tasty, indeed

              For lunch I took the leftover shrimp from yesterday (which had been marinating in garlic butter) and minced it; DH got it as a sandwich; mine got mixed with half a California avocado (more buttery than the FL variety). VERY tasty!

              What must those poor people on low-fat diets be thinking?

                Tonight I am trying the hamburger pie recipe I found on another thread. I am also trying mashed cauliflower. I love this site.

                    I had 2 boneless pork chops fried in butter and olive oil and spinach casserole. Hubby made bacon and we had some strips in place of our late evening snacks of sugar!

                      Last night I had a porterhouse steak with green beans & butter. Yummy!! Tonight, I'm having steak again lol, a t-bone with a salad (lettuce, tomatoes, cucs if we have some).

                        A good thread this, with a lot of mouthwatering recipe's.
                        I think the mod's should make this one a sticky .

                        I couldn't say i've been overly creative today.
                        I came across some sausages in the supermarket today, 6 free range 'old fashioned' pork sausages with herb's with only 5.5 gm's of carb's for the whole lot.
                        I had them with a couple of egg's............very nice.

                          i had to comment on the mashed cauliflower i made them like mashed potoatoes the other night and they were very yummy i put some green onions in mine with some cream cheese a lil mayo salt pepper lil butterand topped them off with some sheredded cheddar cheese! they were very yummy! you could add some bacon to them to and make them yummy..

                            Tonight I am having a good old fashioned tuna salad. I use 2 cups of romaine, cucumber, green pepper and green onion mix. Then I mix a can of tuna with lots of mayo. Mix the 2 together with lots of sliced green olives and 1 oz. finely shreded sharp cheddar. Mmmm

                              We're still riding the turkey trail ... you can get a lot of mileage out of one turkey breast! That, plus buttered, steamed broccoli filled me up.

                                I'm having a slice of cheddar and bacon quiche and a salad. Nice and easy! Too tired to cook or do the dishes after.
