We had "good ole chili" (without the beans) from the book low carb slow cooker recipes. A bit disappointed in the taste. Next time I will increase the chili powder. And it was very runny like a soup instead of a thick chili.
But overall it was okay and filling. Recipe makes plenty for my family of 6 so can't complain too much about that!

I took someone else's idea on this board and used spaghetti squash instead of noodles, added some marinara sauce on top and a little pesto, grated cheese a little parmesan and some cooked ground sausage. Delicious!
I also tried making a creamy sauce using cream cheese, cream, parmesan, adding some cooked chicken, cooked diced red peppers and sliced olives.
Put it all on some spaghetti squash Yum!
The spaghetti squash has a nice little crunch to it.
It's amazing how much I am loving veggies and how versatile they can be.

We had chicken and bacon in a creamy sauce served over spaghetti squash. I didnt manage to get it to fall into the strands others talk of but it was very tasty and got the thumbs-up from my husband!

We had some broiled salmon with a sour cream, lemon dill sauce and green beans with bits of bacon, sauteed in the bacon fat with garlic. Then for dessert I had sf jello and whipped cream and a hot cup of bigelow pomegranate green tea.
Veal chop with portabella muchrooms, arugula salad with artichokes and red roasted peppers, steamed zucchini, broccoli & cauliflowe and a decaf coffee.
Baked salmon in butter, garlic and basil. Then I melted butter, garlic and basil in a saucepan and poured it over my salmon on my plate, left a few tbsp in pot and wilted 1 c spinach. Let's just say I don't have to worry about upping my fat intake today....
I think I will saute up some steak with mushrooms, green onion and green pepper in butter of course! Still have 2 cups of veggies to go for today so I better get to work!
DH grilled some sirloin and served it with some pepper poppers stuffed with chicken sausage, grated Pecorino and mozzarella. He served it up with 2 cups of romaine or each of us with a little dressing.

Anyhoo, for dinner we had pork chops with onion gravy, and summer squash steamed in broth and garlic. Lunch was a big Greek salad (feta, tomato, romaine and plenty of olive oil).
12 oz. cream cheese, softened
1 tbsp butter, melted
1/4 tsp Stevia
1 cup half-and-half
1/2 cup Davinci's sugar-free coconut syrup
1/4 tsp cinnamon
1/4 tsp vanilla extract
Preheat oven to 350 and grease a 9in pie pan. Beat together cream cheese, butter and Stevia until mixture is fluffy. Then slowly mix in the remaining ingredients until well combined. Pour into pie pan and bake for 40-50 minutes. Cool on wire rack for about 15-20 minutes, then chill in the refrigerator for a couple of hours, preferably overnight.
tonight i had 2 hamburger patties with sauteed mushrooms bell peppers and onions. sauteed in butter~the coconut cream cheesecake sounds delicious!~renee~
