Hi Melimeli...I sent you a private note but then I thought I will post it here too. If you are on the nut rung you can try Almond Breeze Almond Milk by Black Diamond. Make sure you get the "unsweetened" one. I haven't been able to find it here, but those who have tried it said its great.

Sent PD a private note on this as well, so sorry for being repetitive PD...Heinz Ketchup comes in a low carb form, I think its 1 carb per tbsp.

I have seen the cauliflower crust, OMG...I have tried this and its DELICIOUS. Lots of work though unless you have a ricer...I think that would make it easier. I have tried using a thin layer of sausage for the crust, but I have a new idea that I might try tomorrow. I have been snacking on fried cheese (the no melt kind) and salsa. It is great. I am going to have some of that cheese sliced really thin in the deli and make a pizza crust out of it. I think that will work. Yum...that sounds good and it just might work...let us know please. I am trying cauliflower lasagna for dinner tonight. I make an awesome real lasagna, so my family is excited to be getting lasagna for dinner tonight. I won't tell them until after dinner that it is low carb. The biggest barrier in the lasagna and pizza is the sauce now that I think I have the crust nailed. Tomato puree has about 25 grams of carbs per 15 oz can. I need to reduce that or go with very little sauce. I wish they didn't put so much sugar in it. I may have to make my own sugar free variety. Yes perhaps...good idea, maybe a health food store would have a lower carb variety also. Hope this is what you were looking for.T. J.

As Sherri said, spaghetti can be replaced by spaghetti squash or you can try Dreamfields pasta. Sofar as bread, there are low carb varietys also flat out wraps which are 6 carbs for the multi grain ones. There are other things as well, but I'll get over it

    So what do I miss.....
French fries...which I have been told you can substitute celery root (deep fried)
Pastry and Desserts...any kind...although I have found lots of alternatives for this.
Red Licorice Twizzlers...they have a sugar free variety, but they are still high in carbs and contain the evil maltitol.

Re: WHAT DO YOU MISS MOST, and what do you replace it with???

milk is also my biggest loss...I can go throughout the day without wanting any, but when I go to the store and see people putting 3 or 4 gallons of milk in their carts there is a little twinge that I feel!!! I was so happy to get the fried cheese website - I'm trying to find things I can have for SuperBowl Sunday -- so far I've decided on wings, celery sticks, rolled up ham w/cream cheese and will try the fried cheese w/homemade salsa. We don't have a big party or anything, but it's nice to have snacks to eat during halftime like we've always done. I'll just have to watch what I eat during the rest of the day and plan for the halftime snacking ahead of time.

I'm looking forward to seeinng how the cheese pizza crust went.....please make sure you post after you eat it.

Re: WHAT DO YOU MISS MOST, and what do you replace it with???

I did the lasagna tonight and it was awesome. My wife thought I was having a cheat and only used a few noodles. When I told here there were no noodles and that it was cauliflower she was floored. I don't eat vegetables. Ever... This has been a major point of contention in our marriage of almost 12 years. Tomorrow is make your own pizza night at our house, so I will do the cheese thing and let everyone know how it turns out. Look for it in the recipe section tomorrow evening. If it isn't there, it didn't work. I think I feel a whooshie coming on! Also, as far as the ricer for the cauliflower goes, I just used this crazy pampered chef nut chopper thing. It has a crazy "W" looking blade with a few extra bends and a bowl attachment. You just steam the frozen cauliflower with an oz of water for 3 minutes in the microwave, drain the water, and give the blade about 50 pushes (it rotates as it cuts). Perfectly riced with no effort.

I don't understand the evilness in malitol. It is induction friendly, it just wreaks havoc on some peoples bowels.

Without a doubt, for me it was/is/forever more will be pizza. I tried the meat crust but did not like it at all - too much meat. I may try the cauliflower crust one of these days. But for now whenever I get the urge, I just slice mozarella cheese, layer on pepperoni and green pepper and add a spoonful of ground tomatoes on top with some seasonings and then just nuke it until the cheese melts. It gets the job done of mostly satisfying the craving, although that craving is very infrequent now.

Re: WHAT DO YOU MISS MOST, and what do you replace it with???

In the past 3 weeks since starting Atkins over I miss Peanut Butter the most. I kept a jar at work and could eat it by the spoonfuls... have done this since I was a kid. No PB&J sandwiches for me... just fold over peanut butter sandwiches.
I have been able to substitue the peanut butter for crab dip, which I eat by the spoonfuls now. It is basically just cream cheese, crab meat, chopped green onions, garlic and onion powder with some additional garlic salt. I also add a couple of dashes of hot pepper sauce. This has helped me with my spoonfuls of peanut butter. I take this to work now instead of the peanut butter. But I average about a spoonful a day.

Re: WHAT DO YOU MISS MOST, and what do you replace it with???

I missed whole wheat pita bread the first few days, but haven't even thought of it until I saw this thread and tried to figure out what I miss the most.

The pumpkin/cream cheese/egg/splenda custard was one of the most satisfying and wonderful things I've eaten since I started on induction.

Also, the mock danish sure is a nice change from fried or scrambled eggs and omelets!

Oh.... Diet Coke (with aspartame) is something I will miss. I haven't cut it out yet, but I have become increasingly aware of the unnatural tingling it leaves on my tongue. I think it might be one of the reasons my weight loss has slowed to a crawl, and I believe that it is really bad for me.

So, as of tomorrow, I will replace it with unsweetened iced tea.

transypodge, sushi used to be one of my favorite things to make, but I thought my sushi days were over.

I have nori, but need to go to the grocery store to get cauliflower. I am going to try your idea. If it doesn't work, it's no big loss, and if it works, WOW!!!!!

                        Thanks for the idea!

I definitely miss pizza and fries - and I have no replacements!!! No matter how great I feel with low-carb, there is nothing better then a great day down the shore with boardwalk pizza and fries. Yes, I know healthiness is better, etc, etc, but the smell and the memopry of taste of our boardwalk pizza and fries is just so tempting in the summer. We go to a seafood restaurant now when we make our trips down - this way we avoid jumping off the band wagon.

deep dish pizza and tried it. It was delicious! I think its a bit similar to the oopsie roll recipe, made with eggs and cream cheese.

I think though, what I miss most is cake, I haven't tried any recipes yet, most of what I found had been a bit complicated,
using ingredients not found at a grocery store. I do love the mock danish though. After induction I may try the 3-minute
chocolate cake, since I don't want to use cocoa yet.

I miss bread!!!! I was a total bread lover. Instead of bread, I now eat tofu. If you freeze firm tofu, defrost it and slice it, it becomes alot firmer and if you grill it, it has a bread like texture. Not the same but keeps me from grabbing a foccacia on the way to work
