This is EXACTLY how I make them, and they always come out perfectly.
If you think it takes too long, maybe follow the instructions as given, and then when you cover and turn off the heat, go do something to keep busy, maybe take your shower, or do some exercise, so you won't notice the waiting time. That's what I do. I never thought of it as taking too long. If the eggs are coming out "soupy", possibly you are not bringing your eggs to a boil first, so when you are turning off the heat, they didn't get enough time to cook.
Check out this youtube. The cook lets them sit a few minutes longer, that's ok. 10 minutes-15 minutes, won't matter. Also, after I run them under cold water after cooking, I usually add some ice cubes to the water for a few more minutes to really cool the eggs down.
