  • What is your go-to Atkins meal?

    Mine is taco salad. I keep seasoned ground beef in the freezer, grate a block of sharp cheddar, keep tomatoes, salad mix and sour cream at all times.

    It just never gets old

    What is yours?

      My grandmother owned a mexican restaurant and concession stand. So I love my spicy food

        Ditto on the taco salad!!!But my main staple is fried eggs topped with melted swiss cheese, 2 tablespoons of Duke's mayo, 2 diced cherry tomatoes, and either 2 fried Nathan's Hot Dogs, or 3 Slices of fried Oscar Mayer All Natural Ham. It is delicious!!! I alternate between the hot dogs and ham, I know the hot dogs aren't the best option, but they don't have sugar in them and I have done pretty well losing weight while eating them But I seriously have one or the other every day!! I love it

          Chicken caesar salad almost every day for lunch. Bagged romaine hearts, Boar's Head rotisserie chicken breast, fresh parm/romano blend cheese topped with Marie's caesar dressing. Never gets old!

                any brand, but usually teh pork kind. since it is so fatty and cooks down to nothing, I also cook a lb of pork sausage with it. it makes it go futher and the seasoning from teh chorizo gets into the pork sausage...but I do the excess fat off with a strainer...it just looks to gross to save.

                    I've been grilling a lot lately as the weather gets nicer (well, as nice as it gets in Wyoming during late April/early may!), so right now my go to meal is any grilled meat and grilled vegetables like asparagus, zucchini, yellow squash.
                    I WILL learn to feel comfortable in my own body again!

                      On-the go!

                      If I'm heading out of the house and have to move fast, it's hardboiled eggs, bacon and string cheese. (We always have all three on hand and pre-cooked.)

                      If I ran out of the house without lunch and have to "shop", it's McDoubles "neat" (two burgers and 1 slice of cheese, no bun, no toppings) and a side salad. I have to be careful which dresing I choose because some contain sugar. If it is too much trouble to sit down and eat (like on the road) where eating a salad would be rough, I get the burgers wrapped in lettuce.

                      Here is one for the office prisoners:

                      I keep certain foods on hand, at present I have canned chicken in water, green beans and mushrooms (also canned). I open a can of each, drain the mushrooms and beans and dump them in a bowl, then I dump the canned chicken on top (without draining, this adds some water to keep everything moist, and those lovely globs of chicken fat) I microwave for 2 minutes on high and I'm ready to eat.

                      I've also been known to keep pork rinds and Fritos Mild Cheddar cheese sauce (for medicinal purposes only .) The entire can has 4 very nasty carbs, but I can usually fit it in if I'm in a munchy, crunchy mood and trying to work while I eat.

                        I love to have pre made burgers in the freezer - those are just the fastest to get heated up and have as a meal when there is a time crunch.
                        If I go back to basic to clean up my eating my go to meal is always scrambled eggs with a bit of cheddar cheese, maybe bacon, and vegetables sauteed in olive oil. I love pepper, onion and mushrooms.

                          For me it's a pizza bowl. I toss meats, cheese and veggies into a ramekin and bake and voila! Deliciousness.

                            North Atlantic prawns fried with onions, button mushrooms and red pepper, 2 teaspoons of double cream, garlic salt and ceyenne pepper, served hot on a bed of mixed salad leaves.....eating like a prince, bring it on!!!!

                              That Fritos dip has got to be the handiwork of the devil himself. When I was pregnant with my daughter, a can of that and a bag of Tostitos later my feet and ankles were so swollen that I had to wear my husband's shoes to go outside and elderly people in motorized carts were offering me a ride in the grocery store!
